Beef Nacho Casserole

This was pretty good. I used sour cream instead of mayo, taco seasoning instead of the chili powder, and Barbecue Fritos instead of tortilla chips. Hubby is now on his 3rd bowl. It would be really good with some refried beans and put inside a warm tortilla!

Easy Ground Beef Stroganoff

This made my house smell wonderful, and I thought it was very tasty. Hubby only liked it "so-so" and he said it was a glorified version of Hamburger Helper. I, personally thought it was very tasty and it hit the spot. I did mine in the crockpot after browning the meat and sauteeing the onions & garlic. Also took the advice of another poster and used cream of mushroom instead of canned mushrooms. Also added in sour cream at the end. Didn't use the water & flour - and it turned out very well.

Chicken Breasts with Balsamic Vinegar and Garlic

Absolutely amazing! We had this tonight and it was wonderful. I, too, didn't flour the chicken breasts as it didn't need it. I also doubled the "sauce" and it was wonderful. One reviewer (EBSEPKE) suggested adding heavy cream to the sauce at the end to take out the bite of the vinegar and to richen the dish, and it sure did! Sinfully delicious! Served this over angel hair pasta and it was perfect. For what it's worth, my family doesn't like mushrooms so I left those out and it was still fantastic!

Skillet Meatloaf

This was "so-so". I read a lot of reviews, and being afraid of it being bland, I used pizza sauce instead of tomato soup. Perhaps I'd like it better with tomato soup - not sure. Anyway, this was not our favorite, and don't think I'll be making again. Thanks anyway!

Baked Split Chicken Breast

Very good. I slice fresh garlic and put the sliced clove under the skin. Not a fan of rosemary so I use thyme, basil, kosher salt & pepper after I brush the skin with olive oil. Lastly, I thinly slice half a lemon and put in the dish and then squeeze the juice from the other side over the chicken. The lemon from the thyme along with the fresh lemon makes this even tastier. Definitely put under the broiler the last bit of cooking time to get that crispy skin. I don't eat it but my husband and kids love it.

Debdoozie's Blue Ribbon Chili

I've got this in the crockpot right now. I brown the meat in the skillet, then add in chopped onion and 3 garlic cloves. Drain the grease, and then I add it to the crockpot with the rest of the ingredients. Also, I add in a can of drained corn, and about 3 tbsp. jalapenos. Cook on low all day and serve with cornbread. My family loves this meal!

Philly Cheesesteak Sandwich with Garlic Mayo

This was FABULOUS! Made mine using the crockpot AND bought some thinly sliced steak from the grocery store (it came in a package called "thinly sliced steak" from Kroger. Put it in the crockpot with 3/4 cup water and a packet of onion soup mix. Cooked on low for 5 hours. I didn't have green bell peppers so I used a red bell papper - sauteed it in a skillet with olive oil, kosher salt & cracked pepper along with the onions. Very yummy - hubby loved it, too!

Balsamic Chicken

Very tasty! I cut my chicken into strips, and marinated the chicken in a ziplock bag for 20 minutes. In one skillet, I added the olive oil and used tongs to add the chicken from the ziplock bag so it could brown up. In another skillet, I added all the marinade so it could reduce down and carmelize a little. When the chicken was done, I transferred the chicken to the skillet with the marinade. Coated it well, reduced heat to low, and covered with a lid for another five minutes. Very good over rice!

Slow Cooker Chicken Stroganoff

I made this again tonight but this time, I didn't add anything but the margarine, Italian mix & the chicken. WOW - the chicken browned up and by the time I added the soup and a block of cream cheese, it turned a golden brown color and smelled incredible! Served over egg noodles, and once again, picky 4 year old gobbled it up!

Pizza Casserole

This was pretty good! Here's what I did: I browned 1 lb. ground beef in the skillet, along with pepperoni slices that I quartered. Once nice & brown, drained the skillet,put the meat back in, added in 1 tsp. olive oil and chopped onion, 1 tbsp. dried oregano,1 tbsp. red pepper flakes, kosher salt to taste, 1 tsp. ground black pepper, and 4 cloves of chopped garlic. Let that sautee a few minutes. Then, I stirred in 16 oz. of jarred Ragu Pizza Quik. Mixed well and let it simmer while I cooked the pasta. Once pasta was done, I drained it and added it to the skillet with the pizza mixture. Added in 4 tbsp. of milk and stirred again. In my baking dish, I put half the pasta/meat mixture, a generous helping of Kraft pizza style shredded cheese, and then added the rest of the pasta/meat mixture. I topped with another generous helping of mozaarella, and then topped it with whole pepperoni slices. Finally, I took a block of romano and lightly grated it over the pepperoni. Baked for 30 minutes til bubbly and brown and it was very tasty.

This was fantastic! I used Bisquick instead of white flour and 1% milk and it was fabulous!!!! I'll always use this recipe for sausage gravy - better than I've ever had in a restaurant!!

Fantastic - my picky 4 year old LOVED it. I used a real onion in place of onion powder, added 1 tsp. white vinegar, along with 1 tsp. chili powder (per another viewer's suggestion). Very good!

Pasta Hot! Hot! Hot!

Add a little lemon juice, a few leaves of chopped basil and you've got one heck of a meal. I also added grilled chicken to the meal by chopping it into bite size pieces and mixing it in with the spaghetti. For an even lighter fare, try Rozini brand noodles for an extra fiber kick

Amazing Italian Lemon Butter Chicken

Great recipe. Left out mushrooms (we don't like them) and added 2 cloves of chopped garlic when sauteeing the artichokes, capers & bacon. Doubled the sauce but used 1/2 & 1/s instead of cream. DELICIOUS!

Italian Spaghetti Sauce with Meatballs

Delicious! I had to modify based on what I had here at home, but it was awesome! I accidentally used 1 cup of Parmesan instead of 1 tbsp. Soooo good, though! Here is what I did: used 1 lb. ground sirloin for the meatballs. Took 4 slices of bread (crusts off) and made bread crumbs with some garlic powder, salt & pepper mixed in. Mixed it all with the ground meat, egg, and 1/2 cup milk. I did brown them on all sides and removed them with a slotted spoon and then sauteed the garlic & onions in the meat drippings. I didn't have 90 minutes to let it all simmer, so I added in one 28 oz. can of crushed tomatoes, some dried basil, and a tsp. of kosher salt. Mixed it up and then put the meatballs in the sauce and let it simmer 30 minutes on low heat while covered. The last 10 minutes of simmering, I added in about 1/2 cup of a good chianti. Made the spaghetti, drained it, and added in 1 tbsp. butter to the noodles before mixing in the sauce. It was absolutely delicious! Didn't use any sugar or tomato paste, and the meatballs were almost falling apart they were so tender and juicy with cheese starting to pop out from where I used a cup instead of a tablespoon - absolutely amazing dinner!

Restaurant-Style Hashbrown Casserole

I made some changes but this was a great guide. First thing I did was brown a tube of breakfast sausage and put it in a bowl. Added in, I used one can cream of chicken and one can condensed cheddar cheese. Mixed this together with 1 cup of sour cream, 1 stick of softened butter, and a package of simply potatoes. Added in some pepper, garlic powder, onion powder, and about 1 cup of shredded four cheese mix (Kraft blend). Mixed it all up, and smoothed out in a very well greased glass baking dish. Poured more cheese on top, a few dollups of melted butter and it's in the oven. DELICIOUS! A few sprinkles of crispy bacon on top when it's done would be divine!
