Garlic Red Potatoes

YUM! The best potatoes I've eaten in a long time. The lemon juice really tastes delightful! I used half melted butter/half olive oil. I will make these again and again!

Sharon's Awesome Chicago Chili

Very good...I didn't have any beer in the fridge, so left it out. Also, I waited till the last 1/2 hour to add the beans so they didn't have that weird, bloated texture I find occurs when they cook too long.

Easy Peach Cobbler

If using fresh peaches, don't add water!! I only used about 1/2 cup and I had a lake of liquid after taking the first piece out of the pan. I drained the pan three times and it was still soupy. This tasted good, not exceptional. Also, I had to bake it about 15 minutes longer than stated in recipe. I wish I wouldn't have used so many of my fresh Colorado peaches on this recipe. It would be a good recipe for canned peaches and very easy to make, if you don't want a fussy recipe.

Southwestern Egg Rolls

AWESOME!! I, too, baked for 15 min. at 425, mainly because I didn't have four hours to freeze before frying, but we loved them so much, I don't know that I would fry them next time either! I only had cheddar cheese at home, and it tasted great!

Pork Tenderloin with Tomato and Pepper Sauce

WOW, was this spicy! I used 1 tsp. of pepper and 1 tsp. salt, and I think next time I would only use 1/2 tsp. pepper. But, it was very, very tasty and healthy, so I'll use this recipe again for sure, with some modifications.

No Bake Cookies III

These are my all-time favorite dessert. I make these once a week and I'm not exaggerating. We call them "Globs" What I've found after making them MANY times is to use 1/2 cup baking cocoa and only 5 Tbsp. of butter. I let the mixture boil for 2 min. before removing from heat to add the rest of ingredients. Just make sure to have the peanut butter already measured out so you don't have to fuss with that when you're in a hurry. These are the best!!

Marinated Chicken Breasts

Very, very good! I didn't have horseradish, but I used a little vinegar. Also minced garlic instead of powder. I made two boneless skinless breasts and six big legs and there was plenty of marinade...could've probably gotten by with less. Kids liked this too!

Catherine's Spicy Chicken Soup

Delicious! I used 5 chicken breasts, so decreased the broth to about 3 cups and left out one can diced tomatoes. It was a little too spicy for the kids, so I ended up sending half of it over to my mom's. I will make this again!!

Cordon Bleu Chicken Rolls

Delicious! Made this for my family & brother and his girlfriend. Everyone was impressed! The only thing I would change is the cook time. Check doneness at 30 minutes. I cooked for about 38 minutes at 375 and it was too dry. But the flavor was great! I made it with Garlic Red Potatoes recipe from this site and steamed broccoli. I will for sure make this again....it looks gourmet and is very easy!

Cheesy Spaghetti Bake

This is a very good recipe for just regular ol' comfort food. It's good for leftovers and the kids like it. I used evaporated milk instead of regular and added a little salt, pepper, garlic powder, and minced garlic to the meat during browning. I also think next time I'll use more noodles than the recipe calls for, but that's just personal preference for noodle to meat ratio. I've made this a few times now and will again in the future I'm sure. Thank you!!

Lemon Blueberry Bread

This was well worth squatting in the 90+ degree heat with a headache while getting my legs all scratched up to pick wild blueberries!! I almost didn't put the walnuts in, but I'm glad I did! It was cake-like and we loved it!

Easy Grilled Chicken Teriyaki

YUM! I didn't have lemon juice, so I used orange. Also, used about 3/4 cup of teriyaki, instead of 1 cup. Only took an hour and a half of marinating for juicy, flavorful results!!

Mom's Chocolate Cake

This recipe was very good. I didn't have a problem with the cook time...took 33 minutes for 9x13 pan. It had a rich chocolate flavor with a very slight hint of coffee. The texture was a little on the dry side. I made it for my dad for Father's Day....he's extremely picky, but he loved it and went back for seconds and thirds! I used the Mocha Icing recipe from this site, which upped the coffee flavor even more! Thanks!

Chicken Enchiladas I

My husband and two toddlers loved this! I would've personally given it 4 stars, but given that it is something the whole family enjoyed, it deserves 5. I thought the flavor of taco sauce was too prominent, so next time, I think I'll try enchilada sauce. Thanks!

Fish Tacos

THANK YOU for the recipe! Moved from So. California almost 4 years ago and my husband and I have really missed the food....especially the fish tacos! This recipe made us feel like we were there again! The kids liked it too, I just set aside some white sauce before adding the hot stuff. Very delicious beer batter too, I'll try it on chicken tenders as well! THANKS SO MUCH! TRY THIS RECIPE!!

Chicken Stir-Fry
