Coconut Icebox Cookies

Simple & yummy. I sliced mine a tad thicker & removed them from the oven just as the edges had the slightest hint of golden-brown, so they were a little chewy, not crispy. But I think they'd be great either way. For a party I drizzled them w/melted chocolate & sprinkled w/toasted coconut.

Coconut Gumdrop Cookies

These were yummy. I didn't have any pecans on hand, so I omitted them. I used chopped-up lemon "fruit slices." I chilled the dough a bit & skipped the fork & just flattened the dough balls a bit w/my palm. If you're like me & obsess a bit about ingredient distribution, I'd suggest chopping your gumdrops pretty small.

Surprise Banana Cake

I thought I'd try this since some reviewers said they got a light texture, but I should have listened to my gut. Sure enough, mine turned out like banana bread. Not a delicate cake like I was looking for. As a banana bread ricipe, I might have given this 4 stars. But as a cake, I gave it 3.

Whoopie Pies VII

The consistancy of the filling was nice, but it tasted bland & the shortning gave it an offputtingly greasy mouth feel. I might try again subbing half butter, adding a bit more sugar, & maybe a little liquor or something to amp up the flavor. I also wish the cookie tasted more intensely chocolatey--it tasted a little flat.

Finnish Pulla

Lovely, chewy texture & a hearty, yeasty taste. Just sweet enough with a thin icing glaze on top. I did have to use a lot more flour than the recipe called for to be able to handle the dough w/o it being sticky. More like 8.5-9 cups. Yummy!

Easy Taco Casserole

Sorry, this was gross. My instincts told me that the mayo was an odd ingredient but I used it anyway, and I think that's what ruined it. I can't remember the last time I actually threw food away, but had to this time. Maybe w/sour cream instead of mayo it's ok?

Oatmeal Chocolate Coconut Chewy

I used 1/2 butter, 1/2 shortening, a bit less sugar, no nuts (will use pecans or macadamias next time), white chips & added 1/2tsp coconut extract. Swapped-out 1/2C of the flour for wheat. I also used a 1/3C scoop for 20 big, lovely cookies, dough in fridge in between (late batches spread less than earliest). 14m in the oven (so centers look a tad underdone), 3 min carryover on the pan. SO YUMMY! Only drawback is I couldn’t enjoy them warm as centers weren’t done. But completely cool they’re nice & chewy in the center w/crisp, tender edges. WOW!

Sweet Dinner Rolls

This lovely dough came together so nicely that I was jealous of my bread machine and I wished I could have had my hands in it instead! I used it for 2 sweet recipies--cinnamon rolls, and a filled braid. Fluffy and yummy!

Cranberry Walnut Bread

My loaf had a disappointingly dense texture--kind of a cross between an over-mixed muffin and a cellulose kitchen sponge. Not sure what I did wrong. Bummer.

Cinnamon Raisin Bread II

Perfect, tender texture, and nice flavor! Came together and rose perfectly. I was able to swap out 1/2 C of the flour with whole wheat flour instead, and it turned out great. I did increase cinnamon to 2 tsp. Thanks!
