About this Cook
I am a Junior High Home Economics Teacher headed into the second half of my 19th year of teaching. I am married with a 13 year old son and 11 year old step-daughter. I love all those things that typical Home Ec. teachers do, sewing, cooking, crafts etc. I do theater in my spare time and sing with my worship team at church.
My favorite things to cook
I love to bake. I have a major sweet tooth and love anything chocolate, so I love to try new baking recipes. I have been experimenting with low-fat recipes over the last couple of years as I am headed into middle age and need to watch my waistline.
My favorite family cooking traditions
My son and I used to bake on Sunday nights together...he is too cool for that now that he is a teen-ager. My mother and grandmother were both Home Economists and I learned so much from them about food and entertaining. As a teenager I used to cook all the time and my dad used to have to clean-up after me....well, it was a deal we made that he got to eat what I made, but had to clean up the mess after me.
My cooking triumphs
Just being able to get past those Oregon State Foods Professors during my years in college. Professor Mary Kelsey intimidated me so much, but she taught me so much. I still remember my days in her classroom and all the things she said to me. She definitely made an impact on my life and career. I used to think I was so terrible at making gravies and soups....I think I make some of the best soups around and my gravy has vastly improved over the years. I do a mean Thanksgiving Turkey and garlic mashed potatoes.
My cooking tragedies
I do not see any of my cooking mistakes as tragedies because I learned from all of them and am a better cook today. I am very confident about my ability in the kitchen, but know I have so much more to learn. Knowing that I have more to learn keeps me open to new ideas and allows me to take cooking risks without being too sensitive if I flop!

Scottley's Basic Yellow Cake
This is a very simple recipe and turns out very well. I am not sure why some people have had problems with it. Just a note....all milk is not the same. If you use a skim milk, the cake will be less rich than if using whole milk. I used skim milk and margarine rather than butter. Butter provides a better flavor, but margarine creams better and incorporates more air into the batter. My layers only took 30 minutes to bake...maybe some people over-cooked the cake. As mentioned by another evaluator, the toothpick method is the only sure way of checking for doneness. I do want to mention that if this cake tastes like a cornbread, then honey, you need to try REAL cornbread. Most restaurant cornbread and box mixes taste like cake.
