Creamy Spaghetti Casserole

This was really good! I modified to make it a little healthier by using whole wheat pasta, chicken (instead of ham) and substituting greek yogurt for sour cream. For veggies, I only had green beans, carrots, and some left over corn. Also added lots of minced garlic, and spices (basil, oregano, onion salt, ground red pepper, and little marjoram to the veggies). And I used parmesan cheese only, which gave it a really nice bite! Very flavorful this way!

Broiled Pork Chops

I did what many others suggested and used 1/2 cup ketchup and 1/4 cup KC Masterpiece BBQ sauce. I also accidentally forgot to add the water, and the sauce was actually perfect for basting! I grilled the chops and basted as suggested, and they were a big hit! Will do these again.

Garlic Chicken Fried Chicken

I thought this was good, but not great. I used the tablespoons of garlic instead of teaspoons, but still, it was just okay. I used thighs and drumsticks instead of breasts. Overall, it was a good recipe.

Roasted Red Pepper and Potato Soup

This was interesting and good. I added 2 extra heaping tablespoons of flour to thicken the base, and would add even more in the future to make it a creamier soup. I would also add 2 more red potatoes, and let them really cook down some more to add substance to the base. Overall, it was good and I would try it again.

Homesteader Cornbread

YUM YUM!!! Loved this recipe. I, too, cut the recipe in half and made muffins. Just the right amount of sweetness, and a little cake-like, which I love. Will definitely make again!

Lebanese Chicken and Potatoes

I used the advice others left and only used 1/2 c. of lemon juice. And I used 2 pounds of skinless thighs. During the last 10-15 minutes, I broiled it, occassionally basting it with the juices at the bottom of the pan. My family LOVED it (though I thought it could have used more lemon juice and spice). My 7 year old had 3 pieces, and my 4 year old said it was his best dinner ever. Definitely a keeper.
