I have traditionally had a difficult time finding a really good chocolate chip cookie recipe. My quest has ended. I have found the best chewy chocolate chip cookie recipe. I had to modify it because we have food allergies in our family. I did not melt the butter because I used a non-dairy margarine. I also used non-dairy chocolate chips and an egg replacer. Everything else stayed the same. I also took some reviewers advice and chilled the dough for a while. The dough was a little crumbly when I was putting on the cookie sheet, however, you could not tell when you took them out of the oven. I suggest if you are having trouble with the hardness after the fact that you cooked them too long. When I took them out of the oven at the prescribed cooking time, they appeared slightly undercooked. However, I let them sit on the cookie sheet for about 2 minutes and then took them off. As soon as they cooled completely, I put them in a sealed container. The next day they were perfectly chewy and wonderful. I submit this review for those of you with food allergies or vegetarians in your family. You can substitute with most recipes and get a good result. A good recipe is about having the proper chemistry and balance of ingredients. Traditional ingredients like eggs, milk, and butter are not always required to get a wonderful result!!!!!
