Chicken and Red Wine Sauce

Texas Enchilada Sauce

I thought this sauce was excellent and not difficult to make. I skipped the baking step and just rolled up chicken stuffing in corn tortillas and splashed the sauce on top. I let everything soak for a minute and then served with cheese on the side. It is great for those with dairy allergies in the family. This way the little one could eat the chicken and tortillas and the rest of us could still enjoy the cheese. I served with guacamole and Best Black Beans from this site.

South Texas Carne Guisada

I really liked the flavor of the meat. There is not much heat, but when you are eating it with a guacamole that is authentic, a salsa with heat, and Best Black Beans from this site, you cannot go wrong and will want to eat the whole pot. Of course, you must serve this with authentic corn tortillas and not the ones from the grocery store......It is an absolute party in your mouth!!! This is going into the regular rotation for the south Texas fare.

Traditional Gyro Meat

I made it as shown except at the end of the cooking, I put a weight on the top of the gyros to make it flat and squeeze more of the fat out of it. It also made it more rectangular in nature instead of humped like meatloaf. I had some problems mixing the meat in my blender. I had to do it in small batches so that it would not overheat my blender. This made the prep more time consuming, but the meat had a very good consistency. My three year old ate it right up. He thought it was a new kind of hamburger.... I think next time that it would be better grilled or sauteed in a little oil.

Best Black Beans

These are really yummy!!! The only thing I do differently is that I saute the onion and garlic in a little olive oil before I add the beans, and I use a little chicken broth to cook in.

Kalua Pig in a Slow Cooker

I added onions and fresh garlic to make this even better. It is good the way it is, but the onions and garlic put it even further over the top!!!! My family likes to eat it with BBQ sauce on it. I had guests who prefer gravy so we skimmed some of the broth off of the meat and made a gravy with mashed potatoes. This is a very versatile meat without many ingredients or difficult steps. Good standby for any occasion.

Oriental Pork Chops

Sausage Smothered in Red Cabbage

It does not necessarily look all that appetizing because of the purple look of the cabbage. My hungry crew quickly overcame that when they tasted how yummy it was. Extremely easy and loved by all. I will definitely keep this recipe. Thanks for sharing!!!!!

German Rouladen

I made this with all the suggestions that I read on this site including...bay leaf, garlic, onion, a little red wine, worchestshire sauce, and cornstarch to thicken. This was just the recipe that I was looking for. I am not sure it is as good as the German restaurant I went to, but it would sure make a good run for the money. I relished every bite and did not want to stop eating. The meat was extremely tender and the gravy was excellent served on mashed potatoes. I served this also with the Red Cabbage recipe from this site because that is what they served at the German restaurant I went to. Thank you for sharing the recipe and thanks to all of you who reviewed it. I will definitely be making this again perhaps even for guests.

Red Cabbage

Awesome recipe. I have to admit I was a little concerned while I was cooking it that the spices would be kinda weird, but it went very well served on the side with the German Rouladen from this site. The flavors were awesome together!!!!

Slow-Cooked German Short Ribs

The sauce is excellent!!! The cooking method is tender. These ribs are a little fatty so remove as much as you can before eating. Leftovers were great!!

Zesty Slow Cooker Chicken Barbecue

I used leg quarters because breasts would be too dry after cooking that long in the slow cooker. I liked the sauce. It was easy, not spicy, and got through the chicken. I made the mistake of cooking the chicken too long and it was slightly dried out. However, the ease of the recipe and the tasty result will make me use this one again and again and again with a shorter cooking time.

The Best Rolled Sugar Cookies

This is a keeper for me because the cookies actually stayed together during the rolling process. They were not too crispy and had an excellent flavor. Wowwee!!!! I did substitute a non-dairy margarine for the butter in this recipe and an egg substitute due to food allergies in our family. We did not miss the extra saturated fat!!!!! Thanks for sharing.

Tantalizingly Tangy Meatloaf

I used canned chopped pineapple in a pinch and it was an absolute home run!!!!! Great meatloaf. I used oats to substitute for the crackers and egg substitute for the eggs and it came out perfect. It is healthier that way, and we have food allergies to contend with. Thanks for the great recipe.

Curried Coconut Chicken

This was a very easy and healthy way to infuse coconut into my diet. It is quick and delicious!!!! I found some chicken broth with Thai Curry flavor and used it to cook the accompanying rice. The flavored rice complimented the dish well. This got rave reviews from my husband.

Slow Cooker Thai Pork with Rice

This was absolutely wonderful. I substituted Sunflower Butter for the Peanut Butter and Soy Nuts for the Peanuts due to food allergy to Peanuts. My husband likes Asian/Thai food but it is difficult for us to eat at these types of restaurants due to the food allergy. Recipes like this make it easier for cooks to make a Thai sauce with the appropriate substitutions. The sauce may have been a tad sweeter than what would have been with the Peanut Butter, but it was still excellent. My husband raved about it.
