Great taste. Good result. Family loved it. I can never figure out how to get the peppers and the meat to come out evenly on the skewers, but I cannot give it a bad rating for that!!!! Ha!!!

Spanish Moroccan Fish

I really liked it the next day more than the first day. The flavors really blended more into the fish. I think next time I may cook the vegetable combination really slowly to get the full flavor going and mix the fish into the hot mixture in small chunks or something so the flavor gets into the fish more and the fish flavor gets into the vegetables. Thanks for sharing this unique dish!!!

Southwest Chicken

I think this recipe has great potential, however, I did not make it as stated so my tremendous result is the result of a totally new recipe which I think I will add later. I loved the combination of the beans, rice, corn, and chicken with the southwest flair, however, this would not have had enough flavor as stated so I could not give it really high marks. Thanks for sharing the recipe because it inspired me to create a really wonderful meal for my family. That is what this site is all about. Thanks again!!!!

Best Big, Fat, Chewy Chocolate Chip Cookie

I have traditionally had a difficult time finding a really good chocolate chip cookie recipe. My quest has ended. I have found the best chewy chocolate chip cookie recipe. I had to modify it because we have food allergies in our family. I did not melt the butter because I used a non-dairy margarine. I also used non-dairy chocolate chips and an egg replacer. Everything else stayed the same. I also took some reviewers advice and chilled the dough for a while. The dough was a little crumbly when I was putting on the cookie sheet, however, you could not tell when you took them out of the oven. I suggest if you are having trouble with the hardness after the fact that you cooked them too long. When I took them out of the oven at the prescribed cooking time, they appeared slightly undercooked. However, I let them sit on the cookie sheet for about 2 minutes and then took them off. As soon as they cooled completely, I put them in a sealed container. The next day they were perfectly chewy and wonderful. I submit this review for those of you with food allergies or vegetarians in your family. You can substitute with most recipes and get a good result. A good recipe is about having the proper chemistry and balance of ingredients. Traditional ingredients like eggs, milk, and butter are not always required to get a wonderful result!!!!!

Easy Shake and Bake Chicken

It is so much healthier and cheaper to make your own shake and bake. This recipe is so easy to modify to your tastes. I did not use any butter at all. This makes it cheaper and easier on the thighs later. I kicked up the combination and amount of spices because the amounts were not enough for good flavor. What a great idea to make your own Shake and Bake Chicken. Thanks for sharing.

Fig and Lemon Chicken

This recipe is pretty decent fresh when you first make it, however, leftovers leave a lot to be desired. The chicken has excellent flavor, but the figs and lemon are overpowering for our family.

Pork with Peach and Black Bean Salsa

I give this four stars because it needs to be kicked up a notch. I put some cumin, paprika, garlic and onion powder in the corn meal to give it some spice. It turned out ok. I think it probably needs some chile of some kind to make it truly great. I think serving with warm tortillas is a good idea with salsa and guacamole. All in all it turned out good and the leftovers are going to be eaten.

Herb Rubbed Sirloin Tip Roast

Chicken Stew with Dumplings

This is a great recipe, however, I could only give it 4 stars because I had to modify it. I just thought it was an absolute sin to boil that chicken without any herbs or spices. I added Thyme, Rosemary, garlic (fresh), onions(fresh), paprika, parsely, and a pinch of Cayenne Pepper. I also had to modify the dumplings because my son is allergic to dairy. I substituted Earth Balance for the butter and soy milk for the milk. I also tried this using brown rice and it came out excellent. This is a recipe where you can experiment to your heart's content on the herbs and the add in vegetables without messing it up. I loaded up the vegetables heavy. I had to double the dumpling amounts because we LOVE dumplings at our house!!!

This is really good if the mangos are in season. If your mango is not very good, it does not flavor the chicken properly. However, the recipe is simple and the result very good for a quick evening meal.

The flavor was excellent. I had to roll out the dough on parchment paper and transfer to cookie sheet to keep them from coming apart. It sure was easier when you have little helpers and not as frustrating to adults or the helpers!!!! I had to make some substitutions due to an allergy to egg and dairy. (Used powdered egg substitute for the egg) That may have been the problem. The cookies baked up perfectly and were a chewy, wonderful delight to my little son.

Dairy Free Whole Wheat Pancakes

This is a staple in our home. Our son is allergic to dairy and egg so finding good recipes can be a challenge particularly for breakfast food. I use an egg substitute in this recipe and they come out perfect every time. They are crispy on the outside and tender on the inside just the way that pancakes should be. My little one gobbles them up and so does my big boy (husband)!!!

Simple Whole Wheat Bread
