Restaurant-Style Zuppa Toscana

I really enjoyed this soup. It is a great way to enjoy this soup when you cannot make it to the nearest chain restaurant to enjoy it or to surprise your husband with a favorite at home!!!!

Escarole and Bean Soup

I was pleasantly surprised at how much my husband really enjoyed this soup. Of course, he really likes bean soup and he had to put hot sauce on it, but he ate a healthy soup. What can I say? WOW!

Cuban Ropa Vieja

I have no idea how authentic this recipe is, however, it is simple and delicious. I thought this was a little on the juicy side for a taco which is what my husband intended to do with it. I know in Cuba that is not how it is eaten, but in my house anything that goes with guacamole is eaten on a tortilla. This went very nicely with fresh advocado or guacamole.

Rich and Simple French Onion Soup

This was awesome!!!! I very tasty Onion Soup. I definitely think carmelizing the onions is the way to go and Red Wine to enrich the broth. I would cut down on the butter a little to hasten the carmelizing of the onions. I also thought that the better quality broth you used the better the soup so do not skimp on the broth. Overall, this is easy and relatively quick soup. Thanks for the recipe!

Quick and Easy Alfredo Sauce

It did not clump. It did not look greasy. It was simple. What a hit!!! I added Italian seasoning and used, of course, fresh garlic and onion. Served on sauteed chicken breasts. Yummy!!!!!

Real N'awlins Muffuletta

This olive salad is absolutely fantastic!!!! It is great for...Superbowl, Tailgating, New Year's Eve, Mardi Gras, Picnicing, Party time, Snack time, or ANYTIME!!!!!! It is just really good. I used 100% evoo. A good substitute for mortadella is bologna. I also used an immersion blender to blend my salad and it seemed easier than using my chopper and easier to clean than a regular blender or food processer. I always double the recipe and have leftover. Because it is immersed in vinegar and olive oil, it keeps really well for awhile in the refrigerator.

Fish Tacos

I thought this "tartar sauce" was absolutely awesome. It really went well with a white fish. I omitted the cabbage because of preference and broiled the fish due to weather permitting and lower fat recipe. Yummy fish tacos!!!!

Chicken and Sausage with Bowties

This was an easy and great recipe. I let my son choose which pasta style he wanted, and he chose rotini. I did not think the sauce was too thin. When I mixed with the pasta it all absorbed in and looked just like the picture. My 4 year old said, "MMM, this is good pasta." He ate every bite and even ate left over for lunch. Enough said!!!!

Hummus III

Very Yummy!!!!! This is the best hummus I have ever eaten. It is a very good combination. I made it as stated and it would definitely be good to add different ingredients to it. I did add the cumin to it as other reviewers suggested. It really is delicious and easy to make.

Oven Fried Chicken IV

Coating came out crispy and flavorful. I used a tofu sour cream substitute due to allergies in the family and it came out great. I added some additional spices and took several other reviews to put the spices in the "sour cream" mixture. I used bone in chicken breasts and the meat juices were sealed inside by the coating. The meat was extremely juicy and tender. I hate dry chicken. The coating stuck to the chicken well. It was a hit with my family. I will definitely put this in rotation.

Slow Cooker Latin Chicken

I thought this was awesome!!!! My little one did not want to try it. My husband liked it and said it was good. I served it as a stew without the rice. I used a mild salsa and it was not hot at all. I liked the flavor that the sweet potato brought to the dish. I used one can of corn and one can of black beans. I also increased the chicken broth to 1 cup and used a 15 oz jar of salsa. The thickness of the stew was just right. I think I might serve it with corn bread next time and spice it up some.

These cookies were great!!!! They are different and yummy. They would be great with Macadamia Nut or white chocolate chips I think. I will still make them without due to food allergies in the family.

Chipotle Crusted Pork Tenderloin

I liked this very much!!!! My husband liked it as well. I did not have any chipotle powder so I used a chopped up chipotle pepper in adobo sauce that I had left over from another recipe. This recipe had a very good smoky, spicy, and sweet flavor. It was simple and easy to prepare with a delicious result.

My Country Style Steak

This is a great recipe. I used cube steak for this recipe and it was a wonderful. The gravy is awesome!!!! This is simple and definitely comfort type food. I made this with soymilk in lieu of water because I thought the gravy might be a little creamier and sweeter and it was. I served with buttered potatoes and Okra, Corn,and Tomatoes from this site.

Tender Italian Baked Chicken

Good flavor and moist. I misread the directions and mixed the coating into the mayo. It was kind of a paste on the outside of the chicken. It was very good despite my mistake. It is hard to screw this up. Very simple and easy.

Beef Heart Braised in Wine

Loved this dish!!! It was easy, had a short list of ingredients and turned out delicious in one pot. I think I would add more carrots and potatoes next time. If I did that I might also increase the gravy amounts slightly. I had a little more meat than vegetables.

Pork Chops a la Slow Cooker

I had to spice it up a bit, but this is a great recipe. It is very simple. I added some seasoning to the flour. After browning, I sauteed onion and garlic in the pan and put the rice in with chicken broth and bouillon. I thickened up some more chicken broth with the leftover flour. Excellent!!! Not bland at all.

Slow Cooker Ham

This was easy and I love the idea of using the slow cooker especially in the summer time. It will also come in handy during the holidays when the oven may also be busy with other things. I added bit of orange juice in the bottom of the slow cooker. Next time I will definitely put some cloves on the ham. I think 1 hour per pound is a good judge of the amount of time you will need on Low.
