Mini Cheesecakes I

I love these on so many levels! They are so easy, so quick and most importantly, SO good. If you have any experience making cheesecake, you know it takes time and attention and well worth it. However, if you're craving a nice piece of cheesecake, you can whip these up and enjoy them with your favorite topping (or plain) in the time it takes to simply chill them. I have tried them smaller as written, but we prefer cupcake size. The tin foil cupcake liners peel away nicely. Thank you to TERRIMOM for her quick and easy graham cracker crust (although I cut her quantities in half for the recipe as written: 1 cup graham cracker crumbs; 4 Tbls butter or marg.; 4 Tbls sugar, mixed and pressed into cupcake liners). Biscotti

I have been searching for a top-notch Biscotti recipe to serve in a country club to a large group of biscotti connoisseurs. None I have tried have measured up to their standard--until this recipe! As written, it's wonderful. I have tried both anise and almond extract. For that traditional flavor, the anise is best. The instructions have this recipe dividing the dough into two rectangles. I serve a smaller biscotti, so I divide it one more time and make four rectangles, then adjust baking time accordingly. The tip for baking until crisp, then removing to slice is great advice. Before returning them to the oven, they will brown more evenly if you separate the pieces (half inch, give or take) and turn them upright. I received a lot of requests to make them crisper and darker, so I place the dough on parchment paper, spray with nonstick spray, and place directly on the rack in the oven. Thank you for sharing!!

Have made this countless times and am always asked for the recipe. Very versatile and sooo easy. You don't need to be a baker, or even know how to cook to look like a pro when you make these.

Quick and Easy Brownies

This has been my go-to brownie recipe for quite some time now. However, I never rated it since the title of the brownie says it all: Quick and Easy, and redundant isn't helpful. However, never had I truly appreciated that title more than when I was asked to bake a very large quantity of brownies for a school event--and one evening to do it.Based on previous reviews, I make the following changes: 1 1/2 Tsp. vanilla; 1 Cup Flour; 3 eggs. Great recipe!

Easy Pepperoni Bread

I LOVE this recipe. I've tried others on this site and always come back to this one. It's easy and versatile. I've altered it and made it with sausage, peppers and onions; mozzarella with sweet peppers, and even buffalo chicken strips with mozzarella. The only problem I have with this recipe is that no matter what I throw in there, I can never seem to make enough.

Restaurant-Style Buffalo Chicken Wings

I baked these, per other reviews, at 400 degrees for 40 min. since I needed to make large quantities. I then served them at a graduation party to a group of avid buffalo wing fans. They had seconds, thirds and fourths and asked to take some home. I even served a batch with Big Al's K.C. Bar-B-Q Sauce and they went quickly too. Awesome!

OREO® and Fudge Ice Cream Cake

What is NOT to like about this recipe? It's quick, easy, versatile and delicious! I love cake, but am not a fan of ice cream cakes. Which is why I buy them for birthday occasions--to keep me from eating way too much of it. However, I had TWO pieces of this!

Good Old Fashioned Pancakes

This is great! I was out of boxed pancake mix and jumped on the site to get a recipe. I did add vanilla, as some reviews suggested, and probably will not buy pancake mix again. Excellent recipe! Thank you.

Southern Moon Pies

These are AMAZING! I printed the recipe out, but it took me weeks to finally make them,and now I have made them over and over! Only alteration I make is I cut back on the amount of sugar in the cookie crust. Between the confectioners' sugar and marshmallow cream, they are wonderful and sweet enough. I bake a lot, but my 10 year old daughter has never requested I make anything until these. Cannot thank you enough for this recipe.

Marshmallow Icing

Oh wow! This is awesome! I love this recipe because the icing stays put on the cake, yet is still gooey marshmallow. I made it for my husband who loves snowballs. I made a chocolate layer cake with whipped cream in the center. After applying the icing, I sprinkled on flaked coconut and it was to die for. Thank you for this wonderful recipe!

Barb's Chocolate Cake

Not sure what I did wrong, but the cake fell apart and was crumbly. I added pudding, like some reviewers suggested; added more oil, as well. Once cooled, it just crumbled. I was so disappointed. It smelled wonderful and the batter tasted amazing!I bake quite a bit, so I'm baffled. Aside from the consistency, it did taste delicious.

Easy Strawberry Lemonade

This is AWESOME! My kids LOVED it! However, for adult entertaining, add some Absolut Citron, or similar, and it's a wonderful and refreshing cocktail. I did put the strawberries into a food processor as suggested, which is a good tip. As an added garnish, try freezing additional lemonade with sliced, fresh strawberries in ice trays. When frozen, pop them in your glass for added flavor that will not water down your drink!

Garlic Bubble Ring

This is awesome! My family loved it! I noticed some reviews stating it called for too much butter. So when making it for the first time, I used my 10-inch bundt pan with 1/2 cup of butter. It was perfect. The bread soaked up any excess butter, but was not soggy. Also, I grated fresh parmesan/pecorino romano cheeses into the mix. This combined with the butter and created a wonderful cheesey crust that everyone was fighting for! Thank you for this wonderful recipe!

Cream Cheese Pound Cake I

I would give this more stars if I could. I am ALWAYS asked to bring this pound cake to parties/gatherings. I have even substituted the almond extract for lemon extract. Then drizzled a lemon/butter/powdered sugar glaze over it while still warm. DELISH! Cannot thank you enough for sharing this wonderful recipe!

Cream of Chicken with Wild Rice Soup

This is a great soup! I did read some of the reviews stating their soup did not come out thick enough. I did not have that problem, but perhaps that is because we LOVE rice and add a touch more. This probably helps thicken it up. If that's not an option, maybe some light cream, as opposed to milk? That has worked for me with other cream soups that were too runny. Thank you for this wonderful recipe!

Beef Barley Vegetable Soup

This is a wonderful recipe! Each time I've made it, I get rave reviews. The only thing I really alter is I use my own beef stock, then use the meat from the bones (beef short ribs are amazing to flavor this!). I also use fresh veggies instead of frozen. Thank you for sharing this wonderful recipe!

Dave's Coleslaw

This was my first attempt at making cole slaw and I had great results. Just want to note that I substituted the dill pickle and pickle juice for sweet relish--just a personal preference. Also, I have made this many, many times and now I add only a medium onion per head of cabbage. I was being told that the onion flavor was a bit overpowering, so I have cut it back considerably. It's also worth mentioning to experiment with different types of mustard. I have used sweet and spicy and dijons, all with great results. The sugar balances it out nicely. Thank you very much for this recipe!

Italian Sausage Tortellini Soup

This is an awesome soup!I left out the peeled/seeded tomatoes and used my own homemade beef stock. I got WONDERFUL reviews, even from people who are not big soup eaters. I get a lot of requests for this. Thank you for this wonderful recipe!
