Vegan Basic Vanilla Cake

I made a few changes. I use almond milk instead of soy. I used 3/4 cup of whole wheat flour and 3/4 cup of white flour. I left out the oil and used 1/2 cup of apple sauce. I didn't have any vanilla or almond flavoring so I substituted coconut & rum flavoring. I served the cake with Birds Custard (made with almond milk). Thank you for the recipe. This is my first vegan cake. :)

Vegan Pancakes

I was looking for a very simple vegan pancake recipe to take camping. I plan to mix up the dry ingredients ahead of time and put in zip lock bags. This recipe is perfect, except I changed it to whole wheat flour.

Slow Cooker White Chili

I have been looking for vegan recipes, so I decided to try this one, but leaving out the chicken. I also experimented using a can of hominy, instead of corn. I just used regular salsa, as that is all I had on hand. The lemon juice and lime juice really bring out the flavors. I like this a lot, thanks for the recipe.

Vegan Black Bean Soup

Excellent recipe to start with. After reading through the comments, I made the following changes. I used 3 cups vegetable broth, 2 cups black beans and 2 cans crushed tomatoes. I also added 1/4 cup green pepper, 4 oz can of green chilis and 1 T. dried cilantro. I guess that is quite a bit of changes, but it is perfect for me now. Thanks for the recipe.

Mexican Pasta

This salad was a big hit. Even the grandkids liked it, although they picked out the beans. I doubled the corn and black olives. I would consider taking this to a potluck. It is easy to throw together at a moment's notice.

Zucchini Patties

After reading the comments concerning this recipe, I just knew that I had to try it. This past summer I had an abundance of zucchini, so I shredded and froze some of it for future use. After defrosting, I did as many suggesting, draining the zucchini. I did make some changes, such as corn meal instead of flour, cheddar instead of Parmesan, garlic salt and red pepper flakes. I used 1/2 of a large onion and grated it as fine as I could. I also added some garlic. My husband and I both love this recipe. Thanks so much for sharing.

Green Tomato Relish

At last! Something to do with all those extra green tomatoes. Since this recipe is rather large, I cut the recipe in half and used my largest cooking pot. This made 7 pint jars, which filled up my canner. I followed the suggestion of others and cut the sugar down to 3 cups (1 1/2 for my recipe). It is hard to judge the amount of green tomatoes that goes into this, as the tomatoes vary in size. So, it is just guesswork. But it tastes really good. Definitely a keeper. Thanks for the recipe.

Smoky Grilled Pork Chops

I made the mistake of not checking to see if I had all the ingredients before starting. I could have sworn I had liquid smoke on hand. I added a teaspoon of hickory salt and a little soy sauce. I spread it evenly on the pork. This was excellent. Will definitely make it again, next time using liquid smoke.

Creamy Rice Pudding

This is by far, the best recipe that I have tried for rice pudding. I precooked the rice in my rice cooker, then finished cooking everything with the microwave. I added 1 tsp of allspice to the pudding. (We like allspice better than cinnamon for flavor).

Pizzelle-Italian Tradition

Crusty Cornbread

I was pleasantly surprised at how well this bread turned out. I always have to add an extra half cup of flour to my bread machine recipes otherwise there is too much moisture and the loaf will fall. My husband even thought that this is one of the better recipes that I have tried, and he doesn't usually care for bread done in the machine. I don't really care for the dry crust that bread machines tend to make, so I wrap the loaf in plastic wrap when it is warm. This really helps the crust to stay soft. Since the bread is usually eaten in a day or two, I don't worry about the extra moisture in the loaf.

Bread Pudding II

This is now my favorite bread pudding recipe. I followed someone's advice and added 1/4 cup of brown sugar. I used up some leftover french bread to make this. I served it with Byrd's custard sauce.

Cinnamon Rolls I

The flavor of these cinnamon rolls is fantastic. My husband, who is fussy about these things said, "If you put a white, icing sugar glaze over the top, it would be as good as any I have ever tasted". Did I mention that he has a sweet tooth? LOL

Pizza Crust I

I used my breadmaker to make the dough. Then made little pizzas with picante sauce and cheddar cheese. I wrapped each pizza in plastic wrap to store in the freezer. It was a success. Thank you for the recipe.

Best Bread Machine Bread

I am new to bread making with a machine. My first two attempts had the bread fall. I read that increasing the flour by 1/2 cup would work, and that works great for me. With this recipe, I followed someone's advice and added 1/2 cup of whole wheat flour to the mix. The bread turned out great! I softened the crust after baking by rubbing with top with margarine and sliced the loaf evenly with my electric knife. This bread is excellent for making toast.

Breakfast Casserole III

This is really tasty, although I added only 6 eggs. I peeled and cubed potatoes, then boiled them until tender. I layered everything in a baking pan and I threw in some other leftovers from the fridge to use them up. I will be making it again. Thanks for the great idea.

Marinade for Steak I

This marinade is quite good. My husband liked it and he is fussy about marinades. I fried my steak on the stove but in warmer weather I will try again on the barbeque. I threw a couple of cans of mushrooms in with the steak, drained them then cooked them. This made the mushrooms a little too vinegary so I don't think I would do that again. But the steak was tender and tasty.

Old Settlers' Baked Beans

My husband really liked this recipe. I followed the suggestion of just using brown sugar and eliminating the white sugar. I also chopped up some leftover hot dogs and sausage meat that I wanted to use up. I used the crock pot for cooking it. This is probably the best baked bean recipe that I have tried.
