Nicole's Winter Carrot Zucchini Bread

Reviewed: Nov. 5, 2013
Delicious! I made this recipe with a few changes and it turned out great. 2 cups unbleached flour and 1/2 cup ground flaxseeds. I also used 3 whole eggs and plain white flour. I didn't use nutmeg as I didn't have any. I don't usually rate recipes if I've changed them but the only reason I gave it 4 stars is because the baking time was a little off. It only needs about 1/2 the time that is listed.

Mom's Spaghetti Bolognese

A really excellent recipe. I was skeptical about the basalmic but it really worked. My only addition was a splash of red wine at the end. Delicious a definite keeper.

Slow Cooker Beef Stew I

Reviewed: Sep. 8, 2011
I have never had my beef stew turn out until now! This is a spectacular recipe for stew. I followed the recipe exactly ( I added an extra bay leaf). It turned out perfectly. There was not a drop left after dinner. Follow the instructions and don't modify. Perfect for a busy mom!

To Die For Fettuccini Alfredo

Reviewed: May 27, 2011
This fettuccini has a good flavour once the adjustments are made (garlic and extra cheese + salt) but the consistency was off and it didn't thicken the way I would have liked.

Cream Cheese Frosting

Reviewed: Jul. 11, 2010
I would give this recipe 4.5 stars if I could. I tweaked the measurements a bit to get the perfect icing. I was making a white cake with a lemon filling so I wanted a lemony icing as well. I added about 2 tbsp. of lemon juice to get the flavour I wanted. I added more cream cheese then the recipe called for I doubled it but and added a 1/4 cup more butter. I also cut the salt completely. I kept the sugar and the vanilla content the same. It was a real winner. Not one piece of cake left behind.

Hamburgers by Eddie

Reviewed: Jun. 3, 2010
If I could give this recipe 4.5 stars I would. I just had to make a few adjustments to it to make it perfect! I followed the recipe and found the meat a bit bland. I added about 1/2 tsp. onion powder and 1/2 tsp of salt and that did the trick. I also followed the suggestion of another reviewer and added some bread crumbs. It was a perfect pan-fried burger.

Poppyseed Dressing

Reviewed: Jan. 29, 2010
Amazing! The only thing I did a little differently is used 1/2 olive & 1/2 veggie oil and 1/4 white wine and 1/4 white vinegar. The best poppyseed recipe ever!

Tartar Sauce III

Reviewed: Nov. 11, 2009
Spice this up and eat it with salmon patties I. It's a greate base recipe. Here's what I did: I used an equal ratio of mayo and sour cream (I would probably just use mayo next time) I sauted the onion and added a teaspoon of hot pickled peppers and kept the relish, I also added a dash of chili lime powder.

Adrienne's Cucumber Salad

Reviewed: Sep. 23, 2009
My family and I really enjoyed this recipe. I also found that it wasn't necessary to cook it but I used hot (not boiling) water to disolve the sugar. It was neither too vinegary or too sweet. It had the perfect blend. It is also nice without the dill (I forgot to add it). However, I will try it again with.

Chocolate Torte

Reviewed: Jun. 30, 2009
Wow! This cake is absolutely delicious. The chocolate frosting is super light and fluffy and just full of chocolatey goodness. The cake itself is moist and delicious. The cream filling is good but I think I will try it with almond extract next time.

Maple-Soy Glazed Salmon

Reviewed: Jun. 17, 2009
I would actually only give this recipe a 4.5 if I could but if I have to choose between 4 and 5, it is more like a 5. I really enjoyed the sauce and I took the advice of another chef and added some corn starch to thicken the sauce. But I feel that it needs something. I can't quite put my finger on it. I'm going to play with adding some ginger or garlic.

Sesame Chicken Strips with Sweet Sauce

Reviewed: Jun. 2, 2009
This is an awesome, awesome homemade chicken recipe. I would probably only give it 4.5 stars because I had to tweak it a bit. I added prepared mustard instead of powdered. I also added 1 tsp of garlic powder and matza meal instead of bread crumbs. It was amazing and my kids ate it. I used low fat mayo and it turned out excellent. I will look no further for a good chicken finger recipe.

Grandma Betty's Ice Cream Cake

Reviewed: Dec. 14, 2008
All I have to say is I love you Grandma Betty! This is an absolutely phenomenal ice cream cake (move over Dairy Queen. I used the basic recipe but then tweeked it to suit my tastes. I used a oreo cookie bottom and then added some homemade rasberry/blackberry sauce. I put the ice cream on top and instead of using whipped cream I crumbled a chocolate cake on top mixed with toasted peacans and some ice cream chocolate sauce. Then I drizzled the top with butterscotch ice cream topping. This cake was divine. I will never need to buy an ice cream cake again. The beauty of this recipe is that you can keep it simple or make it complicated and it is still incredible.

Miracle Baking Powder Pie Crust

Reviewed: Nov. 7, 2008
This is the pie crust I've been looking for. It makes a nice flaky crust that tastes delicious. I made three adjustments: 1) I used 1 c. olive oil instead of shortening. 2) 2 tbsp sugar 3) 2 tsp salt. It turned out perfectly.

Eggplant Parmesan I

Reviewed: Jul. 3, 2008
This recipe got rave reviews from my father-in-law and mother-in-law. I made a few adjustments due to lack of ingredients. First, I put a layer of tomato sauce on the bottom of the pan, followed by a layer of fresh tomatoes sprinkled with fresh garden chives. Next, I didn't have ricotta so I used a roasted garlic feta cheese for the cheese mixture with about 3 tablespoons of cottage cheese. Otherwise, I followed the recipe exactly. It was fabulous.

Lemon Chicken Tenders

Reviewed: Jun. 25, 2008
I would actually give this recipe about 4.5 stars. It was an excellent base but I made some adjustments. For the chicken, I would recommend frying it lightly on a pan over baking just because you get a crispier coating. For the sauce (because I don't like curry) I omitted the curry. I added the juice of 2.5 lemons and about 1/3 cup sugar. I also added 1 heaping tsp of corn/potato starch to cold water and added that to the sauce to thicken. I poured the sauce over the chicken and sprinkled toasted sesame seeds. It was superb and there were no leftovers to dream of.
