Cream Puffs

This recipe is the same as my mom's, and I have had it for years. I used to make them all the time, and then suddenly had difficulty with the puffs flopping after they are taken out of the oven. After reading many reviews, and checking with my niece's mema since my mom long ago passed away, I lowered the oven temp and cooked them at a steady 400 for 30 minutes, (mema said 45 minutes, but I thought that was WAY too long) and then poked them with a toothpick to let the steam escape. They cooled on a rack, and then I left them overnight to be filled prior to serving. Thankfully, and finally, my puffs stayed puffed. Made the filling the morning before serving so it was sufficiently chilled. Everyone loved them, and now I feel much more confident to make them more often without flopping! Glad that I can use this old time family favorite again! Thanks for all the helpful reviews!

Guinness® Corned Beef

I used 1 bottle of beer, 1 can of beef broth, and enough water to cover the meat. I also only used 1/2 cup of brown sugar, and it was plenty. I cooked it in thecrock pot on low for about 4 1/2 hours. It was perfect. I made reuben sandwiches and it was a hit. Will definitely keep as my go to recipe for St.Patrick's day. Next time I want to make the Reuben casserole recipe from this site.

Irish Soda Bread

I picked this recipe because of the buttermilk and sour cream. I omitted the raisins and the caraway just because of my picky kids. I baked it in an 8 inch cake pan. I was going to split it and make 2 loaves, because it didn't look like enough dough at first. It baked up into a huge loaf. I might make 2 smaller loaves next time. Also, I had trouble cutting the top because it was so sticky. I sprayed Pam on the back of a spatula, and spread the dough in the pan and smoothed out the top a little. I sprinkled the top with sugar. It was just enough to make the top crust slightly sweet with a little crunch. I was previously baking the Irrestible Irish Soda Bread from this site, which is more of a quick bread. We liked this one better. I'm keeping this recipe in my recipe box and deleting all the other ones.

Cranberry Sauce Chicken II

Made this in the crock pot and cooked on low for 4 hours. I didn't give it 5 stars because I felt it was missing something, just not sure what. It reminded me a little of chinese sweet and sour, so maybe some pineapple and some veggies.

Chicken Crunch

Good starter recipe, but I felt it was rather bland. I would make it again, but will try cheddar cheese soup, and maybe some broccoli, and spices.

"Pantry Raid" Chicken Enchilada Casserole

I didn't follow the recipe 100%, just because of personal preference. I cooked the chicken in the sauce and shredded. I cut the amount of chili powder to 2 teaspoons, and substituted a can of corn for the beans, because my kids won't eat beans. Overall, I don't think the changes compromised the integrity of the recipe. We served with sour cream. It's definitely a keeper, and can be tailored to your likes. Next time I'm going to try ground beef!

Chocolate Peanut Butter Pie II

I've made this twice already, and it is a huge hit. I followed some of the other suggestions and used a chocolate crust. I doubled the pudding, and layered 2 cups on the bottom of the pie, and mixed the other 2 with 1/2 cup of peanut butter and the whipped topping. I topped with additional whipped topping and chopped peanut butter cups. It's quick and easy! Already shared the recipe. Thanks!

Too Much Chocolate Cake

I found a similar recipe years ago in a newspaper. Mine also calls for 1/4 cup Kahlua, 1 tsp. cinnamon, and 2 Tablespoons grated orange peel (which I omit because we don't prefer it). I also substitute mini chocolate chips for the regular ones because it adds that flavor without biting into a big chip. This cake also freezes well!

Oh-So-Good Chicken

This became a quick favorite in my house. I leave out the mushrooms because my family doesn't like them. I also serve it over the rice, and add a little more salsa & sour cream than called for just to make it "saucy." I have also added shredded mexican cheese over the top and crushed tortilla chips for some crunch.

Jam Thumbprints

Followed the recipe exactly. Baked a batch and waited until they were done to put the jam in, and baked a batch with the jam. I thought baking with the jam would help the jam stay on the cookie more. There was actually no difference. LOVE these cookies and they will be on the list every year for Christmas.

Easy Vodka Sauce

This didn't work for us even after doctoring it up. Used fresh garlic, italian seasoning, seasoned salt, fresh gound black pepper, a couple pinches of white sugar, red pepper flakes and extra vodka, as my cans of tomatoes were larger than the recipe stated. Even after that, it had no flavor. It was just flat. In the end I wound up adding 2 jars of store bought vodka sauce to make it edible.

Chicken Marinade

Really enjoyed the simplicity of this marinade. The sherry made it just slightly different. I only had about an hour or so to marinade, and used thin sliced chicken breasts that we grilled. Can't wait to try it again with thicker chicken breasts and longer marinating time. Thanks for the recipe.

Sweet Restaurant Slaw

I am a cole slaw snob! I love this recipe. It's quick and easy. I omit the onions and seeds, but that is just due to preference. It's still good without it. I always make this with a bbq pork for sandwiches recipe from this site. Great dinner and good left over, too.

Chicken Breasts with Balsamic Vinegar and Garlic

Good basic recipe. I omitted dredging the chicken in flour as other reviews suggested. It seems to get soggy. I also used onions instead of mushrooms only because my kids don't eat them. I also doubled the sauce ingredients and served over angel hair spaghetti, which I added to the pan after cooking to absorb some of the sauce. Quick and easy.

BBQ Pork for Sandwiches

The best. The only thing I changed was that I added a bottle of beer I had in the fridge. I cooked this in the crock one day, shredded and refrigerated until the next day. I knew by how tender it was when it shredded that it was going to be a keeper. Plus, it tasted great even before the bbq sauce. Served with a cole slaw recipe from this site. Great, EASY dinner. Thank you!
