Creamy Rice Pudding

Can be made with cooked brown rice for a healthier treat. Start with pre-cooked rice and go to step 2. I also omitted the butter. Really excellent - I can't wait to see my daughter try the brown rice version for breakfast tomorrow.

French Brioche

Fabulous! Added 2tsp yeast and double the sugar as others suggested. Let rise over an hour before putting in oven. I put this in a tall baking dish which I use for casseroles to cook. If you do this, put a pan on rack above and below to prevent burning. (more info on this Beautiful crusty topped brioche with perfect center. Not too sweet at all. I will make this again and again.

Cherry Crunch

Excellent crumble recipie. Instead of canned filling I used 1 bag of frozen (sweet) cherries and one bag of frozen wild blueberries - no sugar was needed. Next time i will put all of the crumble on top instead of top and bottom. It is just much better as a crispy topping. This is so good and so easy I think it is our new dish for taking to friends or for supper here.

Vegetarian Tortilla Soup

We liked this soup alot. I do reccomend using less cumin though - we used half as much and it was plenty I think more might have blotted out the flavors of everything else. We also used only 1 can of peppers - 2 might have been ok but again I think three would have been too much. I like that this is a very quick meal and it tastes wonderful. Next time I'm going to try using pan toasted tortillas - instead of chips - to cut down on the salt and fat. Will also add black beans next time and maybe some chicken for the non-vegetarian in the household.
