I've been winging this cooking thing for about 5 years now. My mother is Thai, but never passed down any of her cooking abilities to me. Now that I live in GA I cook mostly comfort, southern foods. No, I don't watch Paula Deen.
My cooking triumphs
I didn't know how to bake a potato when I got married! I've come a really long way!

Chocolate Eclair Dessert
Works just as well with a 5.1 oz box of pudding. Also, a tip I read before, and I'll put on here again.... if you don't have time to refrigerate this overnight...dip the graham crackers in milk before layering, this softens them up just as fast as letting the milk from the pudding sit overnight. That tip for me was a lifesaver, bc now it truly is a 10-15 dessert vs a 15 min + fridge time. And I agree w/ the last review. Just zap the frosting in the microwave to pour over the top.

Easy Pancakes
Obviously, use 2 TEASPOONS baking powder, not tablespoons. The pancakes are not super fluffy, but they aren't flat either. This is a great recipe to keep on hand because most everbody has everything on hand. And it's super fast to make. Also, this is a great base recipe for adding things like blueberries, strawberries, etc.
