Chef John's Santa Maria-Style Beans

These beans are fantastic! I doubled the recipe for a barbeque picnic and used half black beans and half pink beans. I prepared the dry beans and sauce as recipe directs, and then used a crock pot on low for 4 hours for the last step (this made it easy to serve them hot for a group). They were perfect with smoked brisket and a salad with cilantro-lime sauce.

Marinated Flat Iron Steak

Flat Iron steak has become very popular and is no longer an inexpensive meat where I am at (Denver). You are lucky to find it on sale for the price top sirloin steak. Good marinade recipe, I tried it on 3/4" thick boneless chuck steak, and it turned out very well. I used twice the amount of fresh tarragon and fresh rosemary, and added some chopped basil, and used 2 cloves of garlic, minced instead of dried.

Golden Rum Cake

I used Captain Morgan Spiced Rum in the batter and Appleton Estate's Special in the glaze. We thought the rum was overpowering, would use less in the glaze next time.

English Muffins

These were very tasty, I will make again. As per other reviewers, 6 cups was way too much flour, which is the only reason it didn't get a higher rating from me. I found letting them rise the last time on the grill before cooking helped.

Taco Seasoning I

Too Much Chocolate Cake

This was amazing, and it didn't need frosting. I was worried about the rich batter rising correctly because my elevation is 6100 ft so I made the following high altitude adjustments: add 1/4 cup flour to dry ingredients and 1/4 cup water to the wet ingredients when mixing. Made with high altitude adjustments and baked in a bundt pan, cooking time was 50 to 55 minutes at 340 degrees.

Spinach, Caramelized Onion, and Muenster Au Gratin Potatoes

I made with 8 three-four inch potatoes and it seemed like it needed more moisture. However I live in a very dry climate, so I don't know if that had effects. The taste was really good, however I added some dry mustard.

Salad with Artichokes

The recipe seems incomplete as the photo shows chopped tomato and olives. I made with them, and I think it would have been missing something without them. The dressing is simple and good but this was a huge amount, with about half left over.

Green Salad with Dried Mint

This was simple, healthy and tasty! However I like a little tang in salads, so I followed the suggestion of one reviewer to add vinegar (I used red wine vinegar) and honey. I added two thinly sliced green scallions. I also substituted drained artichoke hearts for the hearts of palm (which I didn't have on hand), and used fresh taragon from my garden. I suppose you could use basalmic vinegar and/or fresh basil, or poppy seed for other variations.

Tomato Basil Pasta

This recipe was excellent with fresh garden tomatoes. I rolled and sliced the basil, and added 1/4 tsp red pepper flakes to the tomato mixture. Since this was more tasty the next day, The next time I let the mixture marinade over night in the fridge, heat just to room temp, and then serve over pasta.
