Grilled Potatoes and Onion

Reviewed: Jul. 7, 2015
These were easy and tasty. I used non-stick foil for the inner sheet. I used about 3/4 pound of the mini red potatoes cut in half. I sprayed with olive oil and shook them in a baggie with onion rings, salt and pepper, turning so the cut side of the potatoes was down on the foil. Then sprinkled with about 1/2 tsp. garlic powder and then dotted with butter (2 Tbsp). When closing the package, made sure the potatoes were one layer thick.

Mango Salsa

Reviewed: Jul. 4, 2015
This is very tasty however it did not have the heat I expected. I added a tablespoon of Cholula sauce (probably any hot sauce would work). Also added about 1/2 tsp salt.

Perfect flavors, just the right amount of heat that keeps you coming back! I love the way you teach and explain. Thank you Chef John.

Chef John's Santa Maria-Style Beans

Reviewed: Mar. 23, 2014
These beans are fantastic! I doubled the recipe for a barbeque picnic and used half black beans and half pink beans. I prepared the dry beans and sauce as recipe directs, and then used a crock pot on low for 4 hours for the last step (this made it easy to serve them hot for a group). They were perfect with smoked brisket and a salad with cilantro-lime sauce.

Marinated Flat Iron Steak

Reviewed: Jul. 21, 2013
Flat Iron steak has become very popular and is no longer an inexpensive meat where I am at (Denver). You are lucky to find it on sale for the price top sirloin steak. Good marinade recipe, I tried it on 3/4" thick boneless chuck steak, and it turned out very well. I used twice the amount of fresh tarragon and fresh rosemary, and added some chopped basil, and used 2 cloves of garlic, minced instead of dried.

Golden Rum Cake

Reviewed: Mar. 8, 2013
I used Captain Morgan Spiced Rum in the batter and Appleton Estate's Special in the glaze. We thought the rum was overpowering, would use less in the glaze next time.

Versatile and very tasty dinner rolls. I make the dough and let rise once in the bread machine.

English Muffins

Reviewed: Mar. 3, 2013
These were very tasty, I will make again. As per other reviewers, 6 cups was way too much flour, which is the only reason it didn't get a higher rating from me. I found letting them rise the last time on the grill before cooking helped.

Too Much Chocolate Cake

Reviewed: Jan. 19, 2013
This was amazing, and it didn't need frosting. I was worried about the rich batter rising correctly because my elevation is 6100 ft so I made the following high altitude adjustments: add 1/4 cup flour to dry ingredients and 1/4 cup water to the wet ingredients when mixing. Made with high altitude adjustments and baked in a bundt pan, cooking time was 50 to 55 minutes at 340 degrees.
