Italian Vegetable Soup

Wow - this soup is sooo good! I've never been much of a soup person, but this recipe has got me wanting to make them more often. It's very filling and I feel good about eating it because it's so healthy. I did make some slight modifications. I used 3 cloves of garlic instead of 2; Replaced beef bouillion and water with 4 cups of prepared beef broth; drained the corn and beans; and omitted the pasta. I followed the rest according to instructions. I served the soup over brown rice which was super tasty! I didn't want to include the pasta because I'm planning on eating this throughout the week and didn't want the pasta to get mushy.

Slow Cooker Chicken Taco Soup

Very good! I didn't have beer so I used a can of chicken broth. Also made Bill Echols taco seasoning like suggested. Served over brown rice, with some shredded mexican cheese and a dollop of sour cream. It was very very yummy! Will definitely make again.

Tex-Mex Beef and Rice Casserole

I love the versatility of this recipe! This was very good! My husband had 3 helpings of dinner! I didn't find the fire roasted tomatoes so I used zesty jalepeno diced tomatoes and couldn't find the Santa Fe cooking creme, so I used the Philadelphia tomato and basil cooking creme instead. Drained the corn slightly, otherwise it would have been too soupy. To give the mexican kick, I followed anothers advice and added about 1/2 tsp of chili powder and a dash of cumin. Used crushed fritos rather than tortilla chips. Oh - and I used the whole bag of shredded cheese! This is a wonderful dish that makes a lot of food and is great for a quick meal. The cilantro was a nice touch as well!

Shrimp Scampi V

Awesome recipe! After adding the wine, about 30 seconds later, I removed the shrimp and boiled the butter/wine mixture by itself for an additional 5 minutes. That helps cook down the wine flavor considerably. I added the shrimp back in and mixed with the pasta and grated parm cheese. It was really a very delicious meal!!! You can also add other veggies like mushrooms, peppers, tomatoes, etc., to dress up the dish. Yum yum!!

Spooky Witches Fingers

What a fun Halloween treat to make. It was a hit at the party! It ended up looking like fat witches fingers because it expanded when it baked. Next time I'll make sure to roll them a bit skinnier, but either way, everyone loved them! IMPORTANT NOTE: There is no need to remove the almonds, just line around the almond with the gel.

Classic Goulash

Great fall recipe! Made it last night. I halved the recipe to feed just the two of us. I took as a few others suggested and incorporated tomato paste. I split the amount of tomato sauce that it called for and did the other half with tomato paste. It definitely makes for a nice thicker consistency. I also used chili flavored diced tomatoes and added a dash of chili powder, onion powder, garlic powder, and black pepper. YUM!

No Bake Peanut Butter Pie

Amazing! I took others advice and used a chocolate crust also. The pie was very rich and sweet but still VERY good. I topped with crushed Heath. I think next time I will cut down on the amount of sugar and use splenda instead.

Turkey Veggie Meatloaf Cups

I was very surprised at how amazing these turned out!! I usually make a pan meatloaf with ground beef, but this is my new favorite go-to recipe especially since we've been trying to watch our calorie intake. We had leftovers for breakfast this morning and they heated up very well and was still very moist! I did as other suggested and did a half a batch with bbq sauce and the other half with a ketchup, brown sugar, worchestire mixture. The only other change outside of that was that I added a little bit of salt & pepper, two cloves of garlic, and italian herb seasoning.. You must try this recipe!

Slow Cooker Chicken and Dumplings

Turned out pretty good for trying this recipe for the first time. I put in the biscuit dough about an hour prior, but I still think it came out just a tad bit raw. My hubby still loved it though!

Awesome recipe and very inexpensive meal for a large crowd. You can pretty much eyeball the ingredients and it'll turn out great either way. I added a little bit of tomato sauce and worchestire, but I'm sure it would have been just as good without it!
