I am married and my husband and I have 2 daughters, ages 7 and 2. My husband is a bit of a picky eater, so sometimes I'm limited in what new things I can try. My husband also works this crazy swing shift, so I am really always on the lookout for dinners that can be prepared quickly when he is working nightshift (he loves taking leftovers to work - he really loves to rub my homecooking in the faces of the co-workers whose wives don't cook.)

My cooking tragedies
My husband will never let me forget about baking some chicken one time about 12 years ago. I had coated it in flour and hadn't oiled the baking pan properly. When it was finished cooking, the chicken still had white flour on it - my husband looked at it and said the chicken looked like it was on cocaine. He has never let me forget about, what he calls, the "chickaine."

Grandmother's Buttermilk Cornbread
I just tried this recipe last nght and I LOVE it!!! Being a Southerner, I've grown up on the more dense, less sweet versions of cornbread. I've tried other recipes similar to this one, but this one has them all beat! I love the really moist, cake-like consistency of this cornbread - and the sweetness was great, but you can always adjust that down to your liking if it is too sweet. This is the ONLY cornbread recipe I'm going to use from now on. (I still have some left over from last night's beef stew. I'm going to go home and have a piece for lunch - then I'll make a new batch tonight after we finish off the rest with the remainder of our beef stew!!!) Thanks for sharing this recipe!

Slow Cooker Chicken and Dumplings
My husband is a picky eater and he LOVES this recipe. I have made chicken and dumplings pretty much this way for the past 10-11 years. These are the only differences in what I do: I go ahead and boil the chicken until it is done before I put it in the crockpot. (With a 6 year old and a 1 year old, I worry about the chicken not getting done enough in the crockpot). I use no butter and no onion; I use 3 cans of cream of chicken soup and use enough milk to fill 2 1/2 of the soup cans. And I sprinkle some black pepper in the mix. We are lucky to have leftovers - we usually have just enough left for one bowl, plus enough for my husband to take to work with him for lunch. None of his co-workers have wives that actually cook, and they all bring frozen microwave dinners to work. My husband LOVES to tease them with his homecooked meals, especially when he has chicken and dumplings!

The Whole Jar of Peanut Butter Cookies
This is a terrific recipe. . . and it is soooo easy to make (I have a 6 year old and a 1 year old, so I appreciate easy recipes.) Like some other reviewers, 8 to 9 minutes is plenty of cooking time for a softer cooker, unless you prefer crispier cookies. My mom makes terrific peanut butter cookies and these rival her's!! When I first made these last winter, we couldn't stop eating them! My picky husband even liked these, as did everyone else.
