Easy Morning Glory Muffins
These muffins are awesome!! My favorite muffin recipe ever! I just love the combination of carrot, apple, coconut, walnuts, and raisins..the flavors complement each other perfectly! I only made a few modifications to this recipe-- I used 3/4 cup of sugar (I don't like my muffins too sweet), substituted 1/2 of the oil for home-made applesauce, used extra light olive oil instead of vegetable oil, and substituted 1/2 of the flour for whole-wheat. I think next time I will use even less sugar (1/2 cup) and maybe more whole-wheat flour.

Artichoke Spinach Lasagna
This was delicious. The artichoke/spinach mixture complemented the lasagna fairly well. Like other reviewers, I omitted the vegetable broth for fear that it would turn out too watery. Luckily, it worked out. I also sauteed my vegetables in extra-virgin olive oil because I am not too fond of cooking spray. All in all this recipe is a keeper!

Classic Bran Muffins
Excellent recipe. Not too sweet, not too bland, chewy texture. Like others, I substituted the white flour for whole wheat flour. I also used organic ingredients to make truly healthy muffins, and they came out fabulous.
