Favorite Corn Bread

An excellent recipe!! I added an extra 1/4 cup of sugar, plus I added a can of cream-style corn, which added extra moistness. I also drizzled some honey on the top before baking...my husband loves this cornbread!! I make him a care package whenever he goes up north working out of town, and his camp buddies and co-workers are always jealous!!

Mom's Carrot Cake

Great recipe.....!! I'm not sure what could have gone wrong for the person it didn't work out for, but it always comes out great for me!! Instead of using just cinnamon, I use cardamom, as it adds a special sweet spiciness to it....then I cheat and make things simple by just using a commericla cream cheese frosting - which is always a hit.....a super way to make use of the leftover carrots from dinner or just using up the carrots that are left in your garden!!

PHILADELPHIA Key Lime Cheesecake

Quite delicious!!! Though there wasn't quite enough lime flavor (I like it really strong) so I just zested some extra limes and that did the trick. I also combined the juice from those extra zested limes and equal parts of sugar and heated it on the stove to make a syrup which I drizzled on the cheesecake, as I have people in the house who don't like whipped cream or Cool Whip on cheesecake, and that was fan-freakin'-tastic!!

Classic Vichyssoise

Delicious!! I put this soup into jars for some cast members at our cast party for "Nunsense" since the show mentioned Vichychoise in it!! It was a hit with everyone - well done and I will make it again!! My boyfriend had a bowl of it before canning and he said it was fabulous!!

Banana Bread

Great recipe!! I do like to add in a little vanilla, plus I use vegetable or canola oil instead of butter, because it's just easier. Sometimes I like to double the recipe and substitute 1 1/2 cups of mashed ripe strawberries and make strawberry banana bread which was fabulous!!

Key Lime Pie VII

This pie is fantastic!! Easy to make and delicious!! However, I did have to bake the pie a little longer in order to see the little bubbles form on the top....about 20 minutes. But still, a fabulous recipe. Well done!!!

Split Pea and Ham Soup I

I personally don't like Split Pea and Ham Soup, it is vile!!! But my boyfriend asked me to make it for him after our Easter Ham dinner. I used this recipe and he thought it was the best soup he had ever eaten!!! I will definitely make this again if there are ham leftovers!!!

Mom's Ginger Snaps

Every one loved these!!! They were a bit spicy, but not over spicy - I added some nutmeg as well and that added a nice bite to it. They were soft in the middle which was perfect - great as a dunker in spicy Chai tea!!!

Steak and Mushroom Florentine

The flavour of this dish was wonderful, however, instead of the sirloin, I splurged and used beef tenderloin instead, and sauteed it until very rare....I find sirloin too tough once you slice it and the tenderloin was more tender - though I did not slice it very thin (and on purpose, of course).

OMG - This soup is amazing!!! I've made it twice now and each time it came out exactly as expected - delicious!! I like to make it so that I have lunch for a few days - as it tastes even better the next day...fantastic recipe!!

Almond Cherry Biscotti

Very good recipe, however - I ended up greasing the baking sheets very heavily as the dough stuck to them and tore the middle right out. I even had to regrease the sheet after cutting the biscotti into slices. I added almond extract and I also had to add more milk than the recipe called for. The dough was a bit challenging to cut but I did all right. They did taste fantastic, though....just some fine-tuning was necessary.

Chocolate Chip Banana Bread II

I read the reviews from many people - and I decided to follow some advice from them, such as decreasing the temperature, decreasing the amount of sugar, and adding vanilla. The finished product resulted in something I had not expected: the bread wasn't even bread-like; it had more of a cake texture to it, plus despite the change in temperature, and baking it for less time, it still turned out very dark, and very crusty on the edges. As well,when I attempted to remove the loaves from the pan, the bottoms stuck, though I had greased the pans generously. It was very sweet - definitely more of a dessert bread. On the whole, I have used other banana bread recipes that produced better results. I will not be using this recipe again....
