Christmas Eve is always a big evening for cooking - my mother and I usually take charge of what is served, and it's always great....I would like to keep the tradition going.....

I have made macadamia-nut encrusted Mahi-Mahi a couple times, and it has been absolutely fabulous both times!
My cooking tragedies
I made this chicken stir fry - meant to be Thai-infused....I had no peanut sauce so I substituted peanut butter....that did not work! I haven't made it since....

Mom's Carrot Cake
Great recipe.....!! I'm not sure what could have gone wrong for the person it didn't work out for, but it always comes out great for me!! Instead of using just cinnamon, I use cardamom, as it adds a special sweet spiciness to it....then I cheat and make things simple by just using a commericla cream cheese frosting - which is always a hit.....a super way to make use of the leftover carrots from dinner or just using up the carrots that are left in your garden!!

Classic Vichyssoise
Delicious!! I put this soup into jars for some cast members at our cast party for "Nunsense" since the show mentioned Vichychoise in it!! It was a hit with everyone - well done and I will make it again!! My boyfriend had a bowl of it before canning and he said it was fabulous!!
