Chocolate Chip Muffins

Don't understand all the negative ratings - we loved these muffins! I followed the recipe exactly except for using canola oil and regular chocolate chips because that is what I had on hand. Had my doubts when it was all mixed because the batter was really thick but these turned out great! I got 14 very large muffins and only needed to bake them for 20 minutes. Next time I may substitute butter for the oil, will add a little more milk and may add a teaspoon of vanilla as suggested by other posters. Also, will cut the amount of the ingredients for the topping in half because I put a lot on the muffins and still had quite a bit left over. I will no longer buy boxed muffin mixes because these are so easy and much tastier!

Creamy Au Gratin Potatoes

I have never made au gratin potatoes from scratch and looked at about a dozen recipes before deciding on this one. I'm so glad I did - these were so good!! I followed the recipe exactly except for adding some finely minced garlic to the cheese sauce. This will be my go-to recipe from now on!! Thank you for sharing such an amazing recipe!

Janet's Rich Banana Bread

This is the BEST banana bread I have ever made!! Followed the list of ingredients exactly except for using pecans instead of walnuts (because that is what I had on hand). Only change I made was to mix all of the wet ingredients together, including the bananas (mashed) & sour cream; then I added the dry ingredients followed by the nuts. This recipe is definitely a keeper!! Thanks for sharing!

Modenese Pork Chops

I was looking for a different way to prepare pork chops and had saved this recipe a while ago. I did not have all of the ingredients but decided to make them anyway & improvise where I had to. Instead of butter I browned the chops in olive oil - I am Italian and not only is it healthier, I prefer the flavor over butter. I did not have any fresh/dried rosemary or fresh garlic so I substituted Italian seasoning and garlic powder. The chops still turned out AMAZING and I will definitely be making them again with the fresh ingredients!! I covered the pan, cooked the chops for about 20 minutes and thought they did not look done so I cooked them for 10 more minutes. Unfortunately, I overcooked them a bit so next time I will stick with 20 minutes. Because of the lid, the sauce did not thicken very much, so after removing the chops, I cranked up the heat to boil the sauce for a few minutes and it thickened up quite nicely!! This is a simple recipe that yields delicious results - thanks for sharing!!

Homesteader Cornbread

I made this last night to go along with homemade turkey soup and I must say, it is the BEST cornbread I have ever made! I followed the recipe with 2 exceptions: I did not have enough oil so I used melted butter instead and I added about a teaspoon of vanilla. My son, who is not a cornbread lover, said it was fantastic! This will be my go-to recipe from now on! Thanks for sharing!

Caramelized Baked Chicken

This was really good but I don't think I made enough sauce. I reportioned the recipe for 2 servings because I had 2 boneless chicken breasts. Next time I will make the full amount of sauce because while the sauce thickened nicely the chicken was just a bit dry. I will definitely give this another try. My son gave it 2 thumbs up!

Good Old Fashioned Pancakes

I will NEVER buy pancake mix again! These were so good and really easy. I took the suggestion of some other reviewers to cut the salt to 1/2 tsp and add a tsp of vanilla. I plan on using this recipe as a base and adding blueberries, mashed banana or chocolate chips when I make pancakes in the future. Thanks for sharing!!

Anchovy Linguine

After years of going out on Christmas Eve, my sister and I decided to try to recreate the dinner our Italian family had on Christmas Eve when we were kids. I remember anchovy pasta being one of my favorites but neither of us remembered how to make it. I decided to try this recipe and it was a hit! I made a couple of minor changes: did not mince the garlic - just smashed & left it whole, used basil instead of parsley and added a couple of shakes of red pepper flakes. My son, nephew and brother-in-law loved this so much I only got a small serving because they devoured the rest. I will definitely come back to this recipe next year! Thanks for giving me a chance to recreate one of my favorite childhood memories of Christmas Eve.

Classic Waffles

After making these waffles for breakfast today, I will NEVER again buy waffle mix. This recipe was very simple and just about as easy as using a mix. I followed the recipe exactly, then tasted the batter. As several others mentioned, it did not seem sweet enough to me, so I added a bit more sugar and the result was awesome waffles that were crisp on the outside and fluffy on the inside. Thanks for sharing this recipe with us - it is a keeper!

Boilermaker Tailgate Chili

EDITED TO ADD: I entered this into a chili cook-off in my office today and I came in 1st place against 11 other chilies!! I've been asked to share this recipe by more than a dozen people! Thanks for giving me a winning recipe!! I followed the recipe exactly and must say this chili is awesome!! I started it on Saturday evening, cooked it for several hours, refrigerated over night and then simmered it for several more hours on Sunday afternoon. At first I was afraid it would be too thick but in the end the consistency was perfect - especially when I added a bit of cheese when serving. I served it with muffins made from the Basic Corn Muffins recipe on this site. Thanks for sharing this recipe!

The Best Bean and Ham Soup

I followed the recipe exactly except that I omitted the mustard because I did not have any and used a 16 bean mix because that was what my store had. I started the soup on Saturday, cooked it for about 8 hours, then put it in the fridge overnight. On Sunday morning, I removed the ham bone and allowed the soup to simmer on low all day. It was AWESOME! My sister, who is a very picky eater, joined us for dinner and she loved it! She asked for some of the leftovers so she could have it for lunch. This recipe is definitely a keeper and I will be making anytime I have a leftover ham bone.

Brown Sugar Chops

I made these exactly as written except I used 1 1/2" boneless chops. I have never had pork chops turn out so moist! Next time I am going to take other reviewers' suggestion of mixing the ingredients and marinating the chops before baking.

Swiss Chicken Casserole II

I made a couple of changes to this recipe to use ingredients I had on hand. I used pepper jack cheese instead of swiss and cream of chicken & mushroom soup instead of plain cream of chicken. This turned out awesome and was just as good as leftover a couple of days later. This will become a regular in my house!

Creamy Potato Pork Chop Bake

I made this for dinner tonight and it became an instant favorite with my son. I followed the recipe pretty much as written except I added some pepper jack cheese because I had it left over in the fridge. I also used a little more of the onions both mixed with the potatoes and on top. I will definitely be making this again and next time will try using cream of mushroom soup and seasoning the chops before browning, as suggested by other reviewers. This recipe is a keeper and one I would serve to company.

Christmas Brunch Casserole

I used this recipe as a basis and made a few changes to suit our tastes and based on other reviews. I added red bell pepper just for a bit of color, used 8 eggs, substitued fat-free half & half for the milk and tried pepper jack cheese for a bit of zip. My son and our guest said it was awesome. I highly recommend using this recipe as a starting point and have fun making changes to suit your own tastes and preferences.

Fourteen Carat Cake

I baked this and brought it into the office for my boss' birthday and it was a major hit!! One of the guys told me I should give up my day job and become a baker! I made 2 changes to the recipe - as per some of the other suggestions, I substituted 1/2 cup of pineapple juice for 1/2 cup of the oil. I also baked it in a 13x9" pan instead of three 9" rounds. I had to increase the baking time to about 50 minutes and unfortunately, when I opened the oven door after 40 minutes, the cake fell in the middle. Still tasted great but looked awful. All of the guys said this is a keeper and I am sure it will be requested for future birthday celebrations!

Garlic Chicken

I made this last night instead of another recipe I had planned (and could not find). This was awesome!! the only changes I made were I used Italian style bread crumbs and and upped the garlic to about 5 cloves. I will definitely be making this again!

Italian Peas

My son and I both love peas, so I made this recipe for dinner last night. These were so good that I decided I am going to make them as my 2nd vegetable for Thanksgiving this year instead of the usual boring corn. It is amazing that such simple ingredients could make such a delicious difference! Thanks for the recipe!
