Awesome Pasta Salad

I've made this salad twice now and both times it was a huge hit! I left out the pimentos, added some cucumber and used a orange, yellow & green bell pepper for extra color. I made it the night before and used about 1/2 bottle of dressing and then added what remained the next morning. Took it to a potluck at work and it disappeared in no time! Thanks for sharing!

Jimmy's Mexican Pizza

This was delicious! I made a couple of changes - by choice and lack of ingredients. I used ground turkey instead of hamburger, jalapeno refried beans and had to leave out the chili powder because I thought I had some in my spice cupboard but didn't. I mixed the beans and meat together rather than layering them. Added some diced avocado on top - fantastic! Will definitely be making this again!

Ginger Pear Bread

This bread is so good! Only change I made was I had to use canola instead of vegetable oil because that was what I had on hand. I live at a high altitude so I had to bake it an extra 5 minutes and it turned out perfectly. So moist and very flavorful! I shared the recipe with all of my Facebook friends.

Mushroom Pork Chops

This was pretty good but needed bit more seasoning or something. I made this almost exactly as written except that I added a about a cup of white wine - 1/4 cup to deglaze the pan after browning the chops and the rest I mixed into the soup before adding it to the pan. After I made it, I read some of the other reviews (I usually do it before I make something but didn't this time) and next time I'll add some minced garlic and herbs. Served it with wild rice blend but I think it would also be good with mashed potatoes.

Coconut Poke Cake

I absolutely love coconut cake and decided to make this cake for my birthday. I took the advice of some of the other reviewers and poured the cream mixture slowly over the cake to make sure it was spread equally throughout the cake. With the amount of liquid, I was afraid the cake would be really soggy but it was perfectly moist. The only reason I'm not giving it 4 stars is because it was a bit sweet and didn't have a pronounced coconut flavor even with all the coconut on the top. Maybe next time, I'll add some coconut to the cake mix before baking.

Peach Cake II

This cake is so good!! I bought some peaches that were too tart for my taste but I didn't want to throw them out so I started looking for a recipe to use them for baking. I wanted to find one that called for ingredients I had on hand. I'm so glad I decided on this recipe - this cake turned out so good! I used about 3 cups of peaches that I diced and substituted melted butter for the oil. The resulting cake was moist and full of flavor. Some reviews mentioned too much cinnamon but I thought it was perfect. This recipe is definitely a keeper - thanks for sharing!

Bow Ties with Sausage, Tomatoes and Cream

I bought diced Italian style tomatoes by mistake, used fat free half & half instead of heavy cream and regular Italian sausage but this still turned out really good! I added a little basil and oregano to the sauce because I think they make any tomato sauce taste better. The leftovers were even better reheated the next day. I will definitely make this again! Sour Cream Pork Chops

Would give this more than 5 stars if I could! I had to make a couple of modifications because of time and ingredients. My chops were still frozen and I was running late, so I skipped browning them first - just put them straight into the crockpot and seasoned with the salt, pepper and garlic powder. I used 2 cups chicken broth instead of bouillon and water. Didn't have 7-8 hours to allow them to cook so I cooked them on high for about 5 hours. Instead of turning on the oven, I removed the chops to a plate, poured the liquid into a sauce pan and then put the chops back into the crock pot to stay warm. I allowed the sauce to cook on top of the stove for about 15 minutes and it thickened nicely. The pork chops were fork tender and the onions added great flavor. I served the chops on brown rice and poured the sauce over the top. Absolutely delicious and I will definitely be making them again - this recipe is perfect as written and doesn't need any ingredient changes. I don't understand why people drastically modify recipe ingredients and then rate it - just submit your own recipe.

Creamy Chicken Marsala

This was so easy and so good! Followed the recipe exactly except I let it simmer covered for about 45 minutes - steam built up under the lid and caused the sauce to be a little thin. Next time I'll either leave the lid off or vent it. I served it over brown rice - my son said the leftovers where even better the next day. Will be making this one again! Thanks for sharing!

Carrot Pineapple Cupcakes

My son loves carrot cake but is allergic to nuts so I liked the fact this recipe didn't have any. I had my doubts when these came out of the oven because they had overflowed the cups and were a pain to get out of the pan (next time I'll only fill the cups 3/4 and make 14-16 cupcakes). These didn't rise very high and I was afraid they would be dense or dry but they were moist and fluffy. Only change I made was I used canola oil instead of vegetable oil because that is what I had on hand. The frosting was delicious but I would recommend holding off on adding the milk because I didn't need to add any at all. Next time I'm going to try adding some golden raisins - this recipe is definitely a keeper! Thank for sharing!

Absolute Mexican Cornbread

OMG - I wish I could give this recipe more than 5 stars! As always, I read the other reviews before making this and decided not to change the amount of the butter and sugar this time but next time will probably cut the amount of butter and sugar. I didn't have cream corn so I substituted a 12-oz bag of frozen corn and about 1/2 cup fat-free half & half. I used the juice from the chilies and a 4-cheese Mexican blend. This went so well with chili - my only complaint was that I ate so much corn bread, I couldn't finish my chili! Next time I'm going to add some diced jalapenos to give it a little more kick.

Pork Chops for the Slow Cooker

I used two 1" boneless chops and made the full amount of sauce - only deviation was I coarsely chopped the garlic otherwise followed the recipe exactly. These smelled so good while they were cooking but probably should have served them after they cooked for 4 hours because after 6 hours they were really dry. The sauce gave the chops a nice flavor but was not enough to get past the dryness. Might try this recipe again but will shorten the cooking time.

Sausage Pasta

I added a tsp of oregano, used a full pound of pasta and 12 oz of frozen spinach. I didn't have spicy sausage so I added a few shakes of red pepper flakes to the sauce. Otherwise, I followed the recipe exactly and it was DELICIOUS!! It was such a nice change from the usual thick red sauce and pasta dishes I make. This will be added to our regular meal rotation. Thanks for sharing!

Chicken Spaghetti III

This was so good and will definitely be added to our regular dinner rotation!! I used original Rotel, substituted a Mexican cheese blend for the processed cheese and had to use regular onion because I forgot to buy green onions. I used 2 large chicken breasts that I cooked in chicken broth. I added a bit of the liquid left over from cooking the chicken just to make the sauce a bit creamier. It was just the right amount of spicy and seconds tasted better after they had set in pan for awhile - I'm betting leftovers will be even better for lunch tomorrow! Thanks for sharing such an easy & tasty recipe!!

Pumpkin Chocolate Chip Muffins

Made these for breakfast today and they were great!! I made 3 minor changes to the recipe: used melted butter instead of oil, added 1 tsp pumpkin pie spice instead of the individual measures of the other spices and increased the chocolate chips to 1 cup (can't ever have too much chocolate!). These were just the right amount of sweet and went great with scrambled eggs and bacon. This recipe is a keeper and will be making them again and again! Thanks for sharing! NOTE:L I got 16 muffins out of this recipes.

Green Chili Chicken Burgers

These burgers were so good! I used ground turkey because my store was out of ground chicken and substituted finely minced fresh garlic for the powder. (Didn't serve these with guacamole so cannot rate that.) I agree with some of the other reviewers that there was too much oregano so next time I'll cut it back to 1 tsp and try adding some cumin. I cooked these in a grill pan on top of the stove, so the fact the mixture was very wet wasn't an issue at all - they held firmed up nicely as they cooked. My son said these were "add to the regular rotation" good! Thanks for sharing!!

Baked Ziti Casserole

This was so good and will definitely be added to our regular dinner rotation. I did make a few changes based on personal preferences and what I had available. I added some oregano, basil and garlic powder to the cheese mixture because that's what I do when I make my lasagna filling. I made a few substitutions: penne instead of ziti; mixed grated Italian blend cheese for the mozzarella and used jar spaghetti sauce instead of plain tomato sauce. Lastly I sprinked a combo of freshly grated parmesan, asiago and romano cheese on top instead of just parmesan. Next time I going to bake in a 9x13" baking dish because it was just a bit much for a 2.5 quart and it took about 10 minutes longer to bake but I think a larger baking dish would eliminate the extra baking time. Sweet Corn Bread

Made this recipe the other night and the results were wonderful!! I made muffins instead of using a baking dish and that was not the best idea because they stuck to the paper liners so I lost a good portion of each muffin. Next time I will use the 8" baking dish or try greasing the muffin pan instead of using the paper liners. The corn bread was moist and flavorful - even a couple of days later! Only change I made was to up the milk to about 1/2 cup because I thought the batter was a bit too thick. This is now my go-to recipe for corn bread - thanks for sharing!

Chocolate Chip Muffins

Don't understand all the negative ratings - we loved these muffins! I followed the recipe exactly except for using canola oil and regular chocolate chips because that is what I had on hand. Had my doubts when it was all mixed because the batter was really thick but these turned out great! I got 14 very large muffins and only needed to bake them for 20 minutes. Next time I may substitute butter for the oil, will add a little more milk and may add a teaspoon of vanilla as suggested by other posters. Also, will cut the amount of the ingredients for the topping in half because I put a lot on the muffins and still had quite a bit left over. I will no longer buy boxed muffin mixes because these are so easy and much tastier!
