Donut Muffins

These were a terrific hit at my parent coffee group at school. I used grated fresh nutmeg and what a wonderful flavour. I used my new mini-muffin pan and they turned out great, but the bottoms were a little dark. Tip: if you have a medium to dark pan, lower the temperature or place muffin pan on a cookie sheet.

Blueberry Muffins

Excellent. I read that someone found them dry and not sweet enuogh so I added 1 cup milk instead of the 3/4 c. and raised the sugar amount to the same. They turned out very moist. I think it still would have worked out just fine using 3/4. I used 2 cups of fresh blueberries. The cinnamon was delicious in the recipe and set off the blueberry flavour just right. Great recipe.

Banana Oat Muffins

Excellent! A muffin that's a true muffin and not a cake. I like to add a 2/3 Cup of semi-sweet chocolate chips. My picky little boy loves them too. Thanks for the great recipe.

Gingerbread Men

What a nice mild ginger cookie. My 6 yr old son loves them. Mine turned out thin and crispy. We like them just the way they are and didn't decorate them. The only reason I didn't give it 5 stars is b/c the dough was a little tricky to work with. It kept cracking apart when I rolled it out. I put the dough in the fridge overnight so maybe that caused it to become a little dry and hard to work w/. Next time I'll make the cookies the same day as the dough and maybe it will roll out better. Six to eight minutes is all it takes to bake these.

Scalloped Sweet Potatoes and Apples

This was SO yummy. It's a great way to serve yams in a different way. I only used 2 TBSP of brown sugar and used cinnamon b/c I don't like mace. The apples I used (GALA) are already sweet so you don't need to add more sweetness. It was so easy to make. There was nothing left after the potluck. I'm going to make this for Thanksgiving.

Baked Ziti I

Terrific recipe. I do think it needs bake for another 8-10 min. The middle of the casserole wasn't hot enough. I used a pound of penne pasta (approx 6 cups). The sour cream gives the dish a nice tang of flavour. Will make this again. Thanks.

It wasn't as difficult to make as I thought it would be. I used raspberry jam and placed 3-4 chocolate chips inside. I served them for Hannukah and everyone loved them. Very rich tasting w/ the cream cheese in the dough. Will make them again.

Pumpkin Cake III

What a tasty moist cake. Tasted just like a pumpkin pie, just a different texture. I only made 1/2 a recipe b/c I wanted a small cake. I baked it in a 9x9" cake pan for 35 min. I reduced some of the oil and replaced it w/ applesauce. I thought it needed more spices than just cinnamon, so I followed the spice ingredients on my pumpkin puree can. I drizzled it w/ cream cheese icing. Yum.

Herbed Dumplings

I thought this was a great dumpling recipe, though it called for too many herbs for my taste. I reduced them by half. The amount of salt was perfect. They cooked thoroughly and were light and fluffy.

Golden Sweet Cornbread

Good recipe, but way too sweet. I'll cut the sugar in half next time. It crumbled apart a bit too, but I was removing the squares of cornbread right after I took it out of the oven, so it didn't have time to set.

Chocolate Chip Orange Zucchini Bread

Totally addicting! This was the best zucchini loaf I ever made. My church had a coffee house function and asked me to make 5 desserts and this was one of them. I got so many compliments on my baking. The only little change I made was that I reduced the nutmeg to 1/4 tsp and added 1/2 tsp cinnamon. It was so delicious w/ the orange glaze that was suggested. Thanks for the great recipe.

Rhubarb Stir Cake

My church had a coffee house function and asked me to make 5 desserts and this was one of them. I got so many compliments on my baking. This dessert was very popular at the function. I added one cup of raspberries as well. One friend had 5 Servings! I served it w/ cool whip and made sure I baked it a day before serving it.

Joey's Peanut Butter Cookies

My cookies turned out crispy, not chewy and flat instead of thick. I took them out just as the edges turned brown. I didn't refrigerate the dough either before placing them on a baking sheet. Maybe that will help. I also found the dough to be very greasy, and the vanilla flavour competing w/ the peanut butter flavour. I used bourbon vanilla and it has a strong flavour. I'm not sure I will make these again.

Zucchini Brownies

Disappointing. Don't know what I did wrong, but these flopped. Maybe I didn't bake them long enough. I put it in the oven for 25 min as suggested. The brownie was gritty and the oil flavour was overwhelming. I'll give these one more try and will use margarine next time and bake it longer.

Eclair Cake

MMMmmm. Terrific, easy dessert. I wasn't sure how I'd like the texture of the Graham wafers, but it was fine. I was afraid that just using vanilla pudding would be bland so I added a layer of raspberries (1 cup) to the second layer. I made my own chocolate glaze. Everyone enjoyed it. Next time I'll try adding bananas or use banana pudding to taste like a banana cream pie. UPDATE: Made it with chocolate pudding and used sliced bananas on the layers. YUMMMM.

Becki's Oven Barbecue Chicken

I was a little disappointed in this recipe. It tasted wierd. It may have been the margarine I used in it. I would suggest using butter or oil as a base instead. I've had better BBQ sauces for chicken, so I'll stick to them.

Best Brownies

These brownies were okay. For those finding these brownies to be too dry, use applesauce instead of butter and use brown sugar instead of white. This will insure more moisture in your baking. I also added 1/2 cup semi-sweet chocolate chips for more flavour. I don't like icing on my brownies so I left them as is.
