Czech Cabbage Dish

Do yourself a favour and make this dish. Like, right now. Because I'm dieting, I subbed in turkey bacon and used coconut oil instead of the bacon fat, but it's still amazing. @dlynn11, you mentioned your family made other versions - please post them if you know how to make them!

Apple-Stuffed Acorn Squash

I left out the raisins and added some parboiled beets to the apple mixture - it turns everything a beautiful colour and looks stunning against the squash! My husband, who generally hates veggie dishes, said this was one of his favourite foods of all time.

Chinese Pot Roast

Really, really good. I would've rated it 4.5 stars but it's not an option! Like others, I did mine in a crock pot overnight which made it extremely tender (great for someone like me who's prone to overcooking meat!). I also used the recommended amount of soy sauce and didn't find it to be too much, though it was reduced-sodium. Yum!

Colcannon Bake

My husband, who thinks he doesn't like cabbage, enjoyed this dish enough to eat it for days. Like others, I added a small cubed ham. What a great way to use up a cabbage!

Tomato-Curry Lentil Stew

OH MY GOSH - So good!! Granted, I made many changes based on other reviewers' suggestions. First, I upped the amount of lentils and added a handful of quinoa (very healthy). In a separate pan I sauteed 2 celery sticks and a big carrot with a whole onion until fairly tender. I then added about 6 cloves of minced garlic, sauteed further, and added all of this to the boiling lentil-quinoa mixture with a 28 oz. can of diced tomatoes. I let this simmer for the time suggested, and added 1 full tsp. curry powder, a 1/4 tsp. cayenne pepper, as well as salt and pepper. It is amazing, even without chicken stock! Vegan-friendy and super-healthy. Thank-you!

Greek Garlic-Lemon Potatoes

So good! I added carrots and celeriac; the celeriac absorbed the lemon a bit too much, but everything else - especially the potatoes - were a dream. Thanks for sharing!!
