Chef John's Salt Roasted Chicken

Yes!!!! This was PERFECT. The skin was crispy and flavorful, and the inside was juicy and just perfect. I did have quite the smoke problem cooking it, so I had to open up all of my windows. It was all worth it.

Holy hotness! This was fantastic, but definitely had to have a glass of milk handy to cool my mouth. I will probably tone it down a bit next time on the spices, but it really is great as is if you like it spicy.

This was wayyyy too sweet. Only one person of the group liked it, and that was after they already had 4 other drinks (so basically they would've liked anything, haha). It tasted pretty much like sweet and sour and nothing else. I ended up reversing the orange juice and sweet and sour, and that didn't help. It's just missing something to tone it down. Maybe more tequila?

Chicken and Red Wine Sauce

Pretty good recipe. It almost tastes like a teriyaki recipe. I ended up caramelizing mine, which I probably would avoid doing if I made this again, as it took away from the wine flavor. Very flavorful.

Brown Sugar Meatloaf

I rate this recipe 5 stars because it tastes good AND it is incredibly simple to make. I liked the different flavor that the brown sugar added. I followed the directions exactly as is. I had a glass loaf, so after taking it out of the oven, I got two spatulas and flipped it over so that the juices, sugar, and ketchup could soak down the loaf. I then left it in the fridge overnight and ate it the next day. The entire loaf was picked through before I could even serve it for dinner! Big hit.

This simple recipe is AMAZING! I let it go in the crock pot for a really long time. It was PERFECT. I think next time I will add more picked stuff, like celery, etc.

Pepperoni Dip II

I made it the night before and let it sit, which I would recommend to anyone eating this, because it pretty much just tastes like chunky cream of mushroom soup. The next day you could actually taste the pepperonis. However, it still tasted just like cream of mushroom soup. SO... I threw in cheddar, mozarella, and parmesan cheese, Italian seasoning, and red pepper flakes. After that, it was good, but even then I wouldn't make it again. I tried to make it similar to a pizza-taste, and served it with garlic-parmesan pita chips. Even though there was no other spices added, people complained that it was too salty, and I'm guessing that was from the pepperoni. I noticed this in a lot of other reviews. I would not recommend this, especially since there are so many 5-star dip recipes on this site to choose from.

Baked Potato Dip II

This was a very yummy recipe!! It was the favorite among the three that I made for a superbowl party. Even the kids ate it. I did not see the point of using 2/3 of the bacon, so I went ahead and threw in the whole bag; there is nothing bad about extra bacon on anything! I used a combination of baked mini bagels and baked mini flatbreads. It was delicious!

Chef John's Hot Spinach Artichoke Dip

This was very good, better than what I've eaten in the restaurants. I could not find the Parmigiano-Reggiano cheese so I just got the fanciest Parmisan mix I could find in the cheese section. I would agree that it is a little too solid for my chips, so I did like another reviewer and added 1/4 cup of sour cream, which liquified it just enough with no real taste difference. I kept it in the crock pot so it would not solidify, and to keep warm. It was fantastic!

This is pretty good - spicy, hearty... I did use dried spices, which probably made the flavors more intense, so next time I'll scale it down (although it's not a problem - it's really good just the way it is). My boyfriend raved about it, so I'd say it's a keeper! It's different than the usual chicken and dumplings I eat - probably just more herbs and spices, so it's all dependent on how you like it. I like it both ways. :)
