Carrot Banana Bread

My family loved this recipe. My 2-year-old is going through a very picky stage, yet he ate several pieces of this. I left out the nuts and added 1/2 t of vanilla. My first loaf is gone so I will be making another one today. I plan to have this in the house all the time! Update: I made some today and put the batter in 4 mini-loaf pans. I cooked them at 325 for 35-40 minutes and they came out great.

Spinach and Sweet Corn Mashed Potatoes

My husband, who wouldn't even eat spinach before we met, loves this recipe, and my two-year-old can't get enough! I use a little less butter, milk instead of cream, and slice the spinach up really thin. We're having them again tonight, and I can't wait!

Cinnamon Coffee Cake II

This was SO easy to make and it was delicious! I made this for a Mom's group and every piece was gobbled up. My husband was upset because the house smelled wonderful but the cake was not for him. I think I will make it up to him this weekend by making him one!

Sugar Snap Peas

I LOVE this recipe! It is the best with fresh peas and thyme, but I have improvised and it was still good. Twice my husband accidentally brought home snow peas and it was still great!

Chicken Vegetable Potpie

My two-year-old had a second helping of this and that almost never happens! I cooked the chicken using the "Moist Garlic Chicken" recipe on this site. I also sauteed the carrots, celery, and onions in chicken broth until they were tender instead of boiling them to infuse a little more flavor. I took the suggestion of the other review and added a bit of poultry seasoning, too. Yummy!

Broccoli Hamburger Casserole

My picky husband and two-year old both loved this! I substituted ground turkey and sour lean and used fresh broccoli (steamed a bit first) and organic cream of celery soup. We served it over egg noodles.

Wonderful Short Ribs

I have made this recipe four times and I think I have finally perfected it I brown the ribs really well first and then saute the onions in the drippings for a bit. I add everything to the crock pot with two additional ingredients--minced garlic and parmesan cheese. I also cut down on the sugar and add a bit more crushed red perpper. It takes 3-4 hours on low in the crock pot. My husband likes it served with mashed potatoes but I prefer rigatoni--tonight I will serve it with both!
