Fire Roasted Tomato and Feta Pasta with Shrimp

This is delicious. Not a budget recipe...the feta and shrimp make it more on the gourmet side...but worth it as an occasional splurge for our family. Our five picky kids all LOVE it and it is so simple to make! I followed the directions nearly exactly; I didn't have any fresh basil so I substituted dried.

Mom's Best Waffles

These were just perfect. I followed the recipe exactly and the whole family loved them. Will make them again...throw in bacon and eggs and you have the perfect low budget dinner! :)

Slow Cooker Beef Stew I

I loved this recipe. I am looking for good slow cooker recipes right now to make while I am working and thought I would try this one. I haven't ever found a beef stew recipe I liked but the ratings and reviews made me curious. I left out the paprika, since I didn't have it in my pantry, but otherwise made it exactly as written. It was a hit with everyone in our house...all seven of us! I will make this one again. Thank you for sharing :)

Catherine's Spicy Chicken Soup

I made this just as it was written, except that I left out the onions (I didn't have any :( ) and I THOUGHT I had a can of tomato soup, but what I actually had was tomato bisque...but I tossed it in anyway. I don't think either of those would have made a huge difference in the taste. We all loved it here...similar to a chili flavor. My kids despise chicken chili with white beans...this was more their kind of soup. My son had leftover soup for a bedtime snack :) I will definitely make this one again and again!

Shrimp Scampi Bake

This was so fast and easy. Would have been super fast if I hadn't had to devein all the shrimp (picky little girls). I didn't have dijon mustard so I used a little regular, and was worried that it wouldn't be good, but it was delicious. My kids gobbled it down and wanted more (next time I will make four pounds for our bunch!)

Happy Shrimp

I have to just about quadruple this recipe for my family of seven, but there is never any left over...they eat until they are absolutely stuffed. Even the little picky tomato-haters just push the tomatoes out of the way and shovel shrimp in like no tomorrow. It's just that good. I believe I could make this weekly and my kids wouldn't get tired of it!

Rempel Family Meatloaf

This was quick, easy, and delicious. My husband doesn't like meatloaf but I was in the mood for it and decided he was just going to have to eat what I cooked :). He said this was the best he had ever had and ate two large slabs of it :). I will definitely make this again!!! I didn't change a thing...used A1 for my steak sauce. It was delicious :)

Glazed Apple Cream Pie

I had never tried anything like this before, and wasn't entirely prepared to like it. I suppose I made it more out of curiosity than anything. It was actually delicious...and I will make it again and again. We have one in the freezer and it's going with us to Thanksgiving dinner! :)

Actually Delicious Turkey Burgers

I thought these were pretty good, but the kids and hubby turned up their noses. They were easy to make...just don't forget to spray the grill, else you'll have a hard time flipping them over! :)

Italian Sausage Soup

I tend to choose my recipes based on ratings...more than anything else. I found this one and it got glowing reviews...but it really sounded too simple to be true. I gave it a shot anyhow, using my in-laws as guinea pigs, and everyone just went wild...we ate and ate and ate the stuff. I will definitely make this one again...over and over again :) A keeper!

Christmas Breakfast Sausage Casserole

Blackberry Cobbler II

Cream Cheese Mints

I made these for a baby shower last summer. I was a little nervous about how they'd go over because I didn't have any peppermint oil, so I just used peppermint extract. Also, I was slightly heavy-handed with the food coloring that I put in, and they were put-your-eyes-out blue. That didn't seem to be a deterrent to the guests...they ate and ate and ate them and then one of the guests asked me to make them for her daughter's wedding shower this spring. They do take a little time to make, but they're so yummy that they're totally worth it! :)

Easy Cream Cheese Danish

I wasn't sure that I was going to like this recipe, since it had canned crescent rolls in it. I was very pleasantly surprised, though...I thought these were delicious, and they were very easy to make. I took them to a Bible study and was repeatedly asked for the recipe, so I wasn't the only person that liked them. I will make these again and again! :)

Best Carrot Cake Ever

It was requested that I make a carrot cake one year for Thanksgiving, so I came here first and found this recipe, which looked like a winner. It turned out so well that my family now begs me to make this every Thanksgiving. A humorous incident: I shelled my own walnuts (we had a bunch in the house) and left a piece of shell on entirely by accident. My nephew's girlfriend nearly broke a tooth on my cake, so now every time I make it everyone's cautioned to not break their teeth on my cake!! :)
