Maui Girl's Mango Pie

We did enjoy this pie. It was a nice change but somehow felt like an old classic. I did not have lemon juice and it still came out with a very nice consistency. Not too runny or too thick. We likened this more to a peach pie than an apple. Also, other reviewers are correct, this is not an overly sweet pie even with the mangoes being so sweet. If you prefer a sweeter pie you may want to add more sugar.

Sugarless Fruit Nut Muffins

I liked these. Due to the lack of processed sugar the flavor is slightly more complex. If you want it sweeter try adding a quarter cup of Agave Nectar. However, my kids ate them without any added sweetener and approved.

Alaska Salmon Bake with Pecan Crunch Coating

Definitely worth making. I only have a couple of suggestions that stay true to the original recipes. 1. Use course ground dijon, as it has more texture and depth of flavor. 2. Use Panko instead of bread crumbs. This also gives a coarser texture and is nice contrast to the softness of the salmon. 3. Enjoy! This is delicious.

Butter Tart Muffins

This review is for all you high-altitude bakers. These muffins are good. By cooking the raisins they absorb the liquid and work well with the texture. I used cake flour in this recipe as it often seems to work better in high altitude. However, I must note that you will absolutely need to lower the oven temp to 350 to get a nice rise.

Blackberry Cobbler II

My family and I loved this recipe! We first tried it with fresh blackberries and it turned out splendidly. Just a note. It is most definitely better if you double the topping as others have said. I added 1/4 tsp. Allspice and 2 tsp. Vanilla which it needed for the warm homecooked flavor you want. Also, don't skip the cast iron skillet. It adds so much to the presentation. When I made this again it was with peaches and my husbands co-worker said it was the best he had ever had. Thanks!
