I probably won't be a regular blog contributor but I wanted to introduce myself.  I chose Reluctant Cook as my blog name because that is what I am.  I love homecooked food, particularly my own, but I don't like to be in the kitchen too long.  I have other interests and cooking is not my top… MORE

Simple Roasted Butternut Squash

Colleen's Slow Cooker Jambalaya
First time I've made jambalaya and I think the first time I've ever eaten it. This was wonderful. I couldn't find andouille sausage at my grocery store so I had to buy smoked sausage. Later when I got home I realized I didn't have cayenne peper so I had to use paprika instead. It still had a little kick but I would like to use cayenne pepper mext time just to see. I also added a bay leave. Everything else was exact. The chicken was a little tough but that's kind of to be expected when using cut up boneless chicken breasts in a slow cooker. You can always try the boneless thighs instead.

Creamy Banana Pudding
I already had this Eagle Brand recipe and have been making it since the 1980s. I usually add an extra banana and I don't count out the wafers. I usually have some wafers left in the box. It's the best.
