About this Cook
I'm a high school English teacher with two small children in diapers. My husband and I love rock music, video games, and movies. I would rather listen to a good book on c.d. than cook a complicated meal, so simple and delicious is the name of the game for me.
My favorite things to cook
I love to cook brownies, cakes, and all types of desserts. My newest favorite dessert to cook is cheesecake. I always thought I could not cook it after one dismal attempt 8 years ago. Thanks to the recipes on this website, I actually now have requests to make more.

Tuna Noodle Casserole II
We loved it, we will definitely make it again. I used a cup and a half of my homemade mushroom soup that I had frozen and saved for a rainy day and it was really good. My only suggestion for homemade soup users is to add some salt and pepper to taste, to add flavor. Can soup has enough salt for the dish already.

Quick and Easy Green Chile Chicken Enchilada Casserole
I love this recipe, but make it easier on yourself if you can. If you have a Foreman grill, do yourself a favor and grill the chicken, 5 min and your chicken is ready to shread. I also add some chopped green chiles for spice, and 1/2 a container of cream cheese to make it extra creamy. YUM!
