Chicken Enchiladas

My husband LOVED this recipe. I followed it exactly and it was very good. Next time we might add some diced green chiles for a little heat.

Tri-Tip Rub

This is a basic rub and was very good. I added parsley based on the other reviews, and use grains of paradise for about half of the pepper.

Roasted and Curried Butternut Squash Soup

Lemon Cream Pasta with Chicken

I really liked this recipe, the lemon pairs well with the cream sauce and chicken. It was very easy to prepare and the citrus adds a nice kick to it. My husband thought it was too lemony. I will make it again with less lemon for my family but I thought it was very good as written.

Sausage Casserole

Great recipe for a crowd! I followed the suggestions on the board and baked the potatoes first for about 30 min., then added the egg mixture and baked for another 30 min. The crust was nice and firm and the egg mixture stayed fluffy and didn't get overcooked.

Pork Tenderloin with Dijon Marsala Sauce

Overall very good. The recipe would have resulted in overcooked (dry) pork, I would suggest using a meat thermometer for perfect doneness. Next time I would add a bit of garlic, and marinate the pork in the dijon for a few hours.

Spicy Turkey Burgers

I made these for a poker party, they were a big hit. Everyone loved them. My only complaint is they tend to fall apart. Next time I will try adding a bit of egg.

Michelle's Blonde Chicken Chili

I added a 4.5 oz. can of jalapeños in addition to the green chiles, and a bag of frozen corn. It tasted good, but was not very visually appealing. It could have used something more in the spice department.

This is super quick and easy. I usually mix it up when I put the fish and chips in the oven. It's great with a dash of cayenne pepper added in too.

Pork Chops with Pears

This glaze is good but a bit sweet for us. I would make it again but increase the mustard. The chops cooked in about 30 min. but that could be a function of just making two.

Lemon Bundt Cake

The cake was very moist and lemony. Everyone loved it. I didn't add the pudding mix as the cake mix already contained pudding. I also added a touch of lemon zest. I will probably make this again.

Creamy Au Gratin Potatoes

This was a great recipe! It was easy to follow. I added crumbled bacon with the onions, and substituted horseradish cheddar for about ¼ of the cheese. Everyone at the party raved, and there were no leftovers.
