Becca's Chicken-Fried Pork Chops

LOVE LOVE LOVE. I have never made pork chops so crunchy and juicy! I have repeatedly tried to bake a crunchy pork chop but always ended up w/a soggy bottom. The "frying" was perfect. Used 2 pork chops and no potato flakes, instead used butter crackers & panko crumbs. BUT I look foward to trying the tater flakes since the cracker/panko crumbs were sooooo delicious! I also fried 2.5 min on each side then 1 more min each side. THANK YOU for such a great recipe! I can't wait to tweek it w/additional spices :)

Baked Salmon II

AWESOME FOR 1st TRY!!! This is my first attempt at making salmon. I went exactly by the recipe EXCEPT that I used dill (a couple of dashes) in my marinade. I placed the filets in a glass dish and marinaded for 30 min. turning every 5 min. Before I put it in the 375 oven, i melted 1tblsp unsalted butter with a couple dashes lemon juice and added it to the glass casserole dish(making sure I rubbed the filets in the butter and marinade mix). Covered in aluminum foil and baked @375 for 35 min. I served w/softened baby carrots & butter & herb rice. My fiance and I LOVED IT!! AWESOME RECIPE!!! I can't wait to make it for my friends and family!!

Double Tomato Bruschetta

I liked this recipe, but my husband likes a more traditional bruschetta. I think the Balsamic Vinegar scared him. I ran out of bread the first night and was able to use it as a topping for some chicken the next. Turned out great!
