On our third date, the man I've come to love with all my heart asked me "can you cook". I answered "sure". He hadn't asked if I did cook or if I knew how to cook, in fact I'd never made a meal. I'm a highly educated, intelligent woman capable of following instructions so I figured I "could" cook :o) And so my cooking journey began. He knows the truth now but never would have guessed I was a newbie in the kitchen.

Rainbow Veggie Chili
I'm very new (within a week) to eating a plant based diet and this was really good. That's quite a compliment considering I'm still REALLY craving bacon cheeseburgers :) I put WAY too much cayenne in it (totally my fault, not the recipe) and I learned that when you can't add sugar or anything dairy a little sweet basil really helps calm down the spice :)

Taco Pizza
When all the local pizza joints stopped serving taco pizza, I went searching for one I could make myself. This is the 4th recipe I found and tried and the last one I'll ever need. I don't understand reviewers that change everything then leave a rating but I don't have a bread machine or patience so I used store bought pizza crusts on this one and it is still SOOO delicious. It is the perfect combination of flavors. Occassionally I add a little shredded lettuce and diced tomato on top after cooking but the pizza is delicious without it. Great recipe!

Maria's Stuffed Chicken Breasts
LOVED this. I took the advice of an earlier review and did a light breading of italian seasoned croutons/bread crumbs and parmesan cheese. This was INCREDIBLE. By far one of my favorite recipes.
