Slow Cooker Chicken and Dumplings

Oh what is another review to add onto 4524 others? If you got this far, God bless you. This was great. I used to make something similar to this in the oven using a baking bag. This is much easier. I even used mostly generic ingredients (cream of chicken soup and biscuit dough). I used thighs and legs instead of chicken breast, and I simply cut the biscuits in half (added 3 hours before eating). I took one reviewers advice and added a bunch of spices (season salt, garlic salt, parsley flakes, pepper). Made some corn and white rice on the side. Also, took about 3 cups of the juices and added 3 tbsps of flour to make the gravy thicker. I'll definitely be making this again.

Cuban Midnight Sandwich

Anything I can get the entire family to eat gets five stars. LOL This was very good. I hate pickles, but I notice they accent the taste very well. Very quick and easy to make. I highly recommend for a quick and easy meal!!!

Slow-Cooker Corned Beef and Cabbage

This was a HUGE hit with the family. The corned beef was nice and juicy. The cabbage was even tasty. Waiting until the last hour to stick in the cabbage was a great idea. Not too soggy. I took some of the advice and cooked it on low for 8 hours. I did a couple different things...instead of adding the spic package I simply added a few peppercorns as suggested. I also added two cans of beer to the mix. I used regular red potatoes instead of baby reds, and I cut them into big chunks (8-12 pieces). They were not soggy at all. A fun tip - buy soda bread. The family made sandwiches using the soda bread, mustard, and then meat and cabbage. This will be my preferred way of cooking it every year.

Sweet and Savory Ribs

Even our little "vegetarian to be" gobbled down these ribs. I rubbed the ribs the night before with paprika, garlic salt, sea salt, brown sugar, and a little black pepper and cayenne pepper. I also recommend making the sauce the night before too. Thanks for an awesome recipe that is so easy to convert into your own.

Mexican Chicken and Black Bean Salad

This was a huge hit with the family. I added a small can of Mexican Corn to the meal. I decided to mix the black beans and corn in a bowl and microwave for a minute. I used a chunky salsa instead of a traditional salsa dip (I found it next to the chip dip in the fridge area of the store). I used mild everything, which was fine with the family, but I sprinkled chili powder on mine to spice it up a bit. I also cubed up the chicken on the salad. I love these types of recipes where you can personalize them up like this.

Garlic Parmesan Chicken

Even the picky kids liked this. I used split chicken breasts with the skin instead. They came out very moist and the flavor ran through the skin. I was asked what the secret ingredient in the bread crumbs was. This went well with the asparagus and tomato salad.

Asparagus and Tomato Salad with Yogurt-Cheese Dressing

I added a splash of red wine vinegar to it for a little extra flavor. I'm not an asparagus fan, but the family loved it. I used it as a side dish for the garlic parmesan chicken.

Baked Ziti I

I have to rate this recipe since two of the four of us decided this was the best ziti we ever had. I was really skepticle about the sour cream, but the combination of it all really teasted great. I will probably cut back a little on the meat next time, since I used sauce with meat in it. I highly recommend this one for families, since both girls loved it (very rare)

Chicken Cordon Bleu Casserole

Ok, anything that the girls say "This is good" gets a five star rating. The family absolutely loved it and I was told it is just as good cold as a leftover as it was hot. I cheated. I used prepackaged diced ham and cubed swiss.
