Braised Venison with Rosemary and Shiitake

This was the first venison recipe I've tried that really did come out tender! I enjoyed the leftovers as much as I enjoyed it the first night.

Slow Cooker Beef Pot Roast

I loved this. I followed it to a tee with the exception of using a boneless 2 pound roast (I'm a one person family). I used the other ingredients at their original volumes though and it made an absolutely awesome mushroom gravy. I served it over egg noodles. The leftovers were even better! The house smelled amazing while it cooked. True comfort food and a keeper recipe. Thanks, Chef John!

Pepperoncini Beef

LOVE this recipe. It could not be any easier. Be sure to use fresh rolls because you want to sop up the juice! I've used Mozzarella and Provolone on top and both are great. I freeze small portions to pull out later and it freezes well also. Scrumptious!

Quick and Easy Sauteed Spinach

This is one of my favorite quick and easy weeknight meals. Only change I made was fresh garlic substituted for garlic salt. Serve it alongside or over top of jasmine rice with a little soy sauce and it is Heaven!

Easy Chicken Enchiladas

This is my go-to recipe for leftover chicken. So easy and delicious. I get called on to bring it to pot lucks. Only change I made was to use green enchilada sauce in place of the salsa. I drizzle some in the bottom of the pan before baking and it adds flavor and also keeps it from sticking. YUMMO!

Cape Cod

This has been my favorite drink all summer. I usually add a splash of seltzer at the end to fizz it up. Flavored seltzers add new flavor twists. I've even shaken it up with the different flavors of cranberry (cranraspberry is a favorite). Very refreshing during the heat of summer and what better way to get your healthy juices in? :)

The Best Vegetarian Chili in the World

I followed recipe but used "Mexican style extra spicy chili powder" and I added a cubed zuchini. I used four crumbled Portobello/garlic burgers. This chili tied for second in a chili-cook off entered yesterday and the competition included the meat chilis. I am so happy to have some left over to enjoy myself!

Balsamic Chicken

This is truly yummy! I doubled the marinade and used chicken thighs. I couldn't get the sauce to thicken as much as I would have liked but I still loved it and will make it often. Addendum: This is also my new favorite marinade! I marinaded beef kabobs for 40 mins prior to grilling. I heated the leftover marinade in a saucepan and served the whole thing over basmati rice.

Green Bean and Bacon Saute

I used fresh green beans in a skillet and by the time they were cooked to my liking, the pepper flakes and garlic were a bit crisp. Regardless, this recipe was scrumptious and I will do it again and maybe slightly nuke or parboil the beans before adding them to the pan.
