Shrimp Lemon Pepper Linguini

Made this last night and it was easy to make and delicious. For those who wonder how to stretch the sauce. Add 1/2 cup of the water used to make the pasta into the mix as you are stirring the shrimp into the pasta. Also, I added a pinch of red pepper flakes into the sauce to give it a little kick. It was great. Would defintley make this again.

Chicken with Rice (Arroz con Pollo)

Made this last night. I left out the jalapenos because the kids do not like hot. I did have a hot pepper that I cooked with the onions. I also added a can of pink beans instead of peas. This was a big hit. I would make it again.

Penne Pasta with Cannellini Beans and Escarole

great recipe, made this for my family, huge success. I added some chicken stock and crusher red pepper. Also, if you want add a cup of the water from the penne after you have mixed the ingredients, it will add a little juice to dip your bread.

Sirloin Tips and Mushrooms

Very good. Made some changes. I cut up the sirloin, put salt/pepper, then added to the pan. After browning, I removed the meat juices, cleaned the pan, then sauteed garlic/onion/fresh mushrooms. I then added the meat, I only had plum tomaotes and white wine, but its all good. I added fresh basil and a little oregano. I put this on a low flame for 1 hour and served with rice. Tatsy. Kids loved it

Sweet Potato Minestrone

I made this for the family. It was delecious, and exteremly healthy. I followed the recipe to the letter, added some white beans and a little cayeene pepper. Served it frsh dinner rolls and parmesan cheese, it is a keeper

Chicken Breasts with Lime Sauce

Just made this for my family. Delicious. My daughter usually drowns everything in ketchup. Not a drop on these. Thats a testimonial in my family. I also used butter and chicken broth.
