About this Cook
I am an academic with a PhD from the University of South Australia in Adelaide. I am a Canadian, and as of November 27 2013 will also be a New Zealand citizen. I moved to Australia to do my PhD in June of 2001 and then to New Zealand in December of 2005. I started my family young (at 19) and have four children and three step children. I LOVE where I live in NZ and while I miss my family in Canada I'll continue to live in NZ and eventually Australia again.
My favorite things to cook
I love to bake and I'm truly 'addicted' to my crockpot. There are a lot of really good crockpot recipes on the web so its in use winter and summer.
My favorite family cooking traditions
My mum is a fantastic cook and baker. She used to 'rotate' her menu like many cooks did in the 60's and 70's She had a basic two week menu that she worked from and she rotated our meals that way. Made shopping easier and a kids we never really noticed. I don't cook that way, I tend to follow the dictates of my stomach on the day :) or the kids suggestions!!
My cooking triumphs
I've changed a lot of my cooking in the last three years. Much less carb heavy and calorie heavy. I work out 4 days a week now, cardio and weights so I try to keep the diet as reasonable as possible. Big temptations? Wine and chocolate.
My cooking tragedies
the time I put tomato sauce on fish and baked it in the oven and it came out smelling exactly like POOP! My kids still laugh about it!

Beer Cake I
This is really nice! Wanted something a bit different and this was! I finished the cake with a beer and lime glaze (as per the most helpful positive review, I just added lime juice) and I just made the cake with the mix, beer, four eggs and oil. I didn't have vanilla pudding mix and it didn't affect it at all. Really good!

Homemade Enchilada Sauce
This is a good basic recipe. But I found it bland. So I doubled all the spices, used a good dash of salt and for added kick I added one whole dried Guajillo chile and a good chunk of achiote paste. I whizzed them all up in my small blender with a bit of the already prepared sauce and added more garlic to the mix as well. Divine! This is going in my posole.

Grandma's Lemon Meringue Pie
This is a really good basic recipe to get you started. I did a bit of tweaking. I used 8 medium sized lemons from my tree,and 4.5 tablespoons of cornstarch. The sugar and water were the same. It has turned out fantastic, really tart and lemony and GOOD. I also put this filling on a crust made from oatmeal, dates, demerara sugar and light margarine (more nutrient dense then regular pie crust and it tastes fantastic).
