Chicken Pot Pie IX

I have made this recipe 4 times now and let me tell you, it is delicious! OK, so I followed some other reviews and made adjustments. To me, this recipe NEEDS potatoes. I use 2 red potatoes, peel them and chop them to a little larger than bite size pieces. I boil them for 6-8 minutes before everything else goes in the pot. Also I add 2 bullion cubes to the water and season the chicken before putting it in. Oh yes, and I double the sauce mix. Since I season my meat and add bouliion cubes to the water to boil everything, I just use that liquid for the sauce instead of chicken broth. It essentially is chicken broth once everything has cooked in it. Any leftover sauce makes for amazing gravy for biscuits and gravy in the morning. Oh yes, doing an egg wash on the bottom crust before adding the filling keeps it from getting too soggy and an egg wash on top gets the top crust a gorgeous golden brown. Hands down my 6 year-old daughter's favorite meal for dinner. I can't wait to make it again!

Chicken and Bacon Shish Kabobs

Definitely need to use regular sliced bacon. The thick bacon did not seem to cook all the way through (though the chicken under it did) and left this rubbery texture. Was not appealing to me or my husband. Also, we did not like the flavor of the marinade. My husband was VERY disappointed that he put all that effort into setting them up on skewers and then hated the taste. While I love the idea and look of kabobs, I would never do this recipe again.

Nanny's Goulash

I loved goulash growing up and decided to make it for my four-year-old. I took out the mushrooms and added squash. Used chili powder instead of paprika (my little one can't handle things too spicy) and cut the amount of onion in half. Served it over penne noodles and topped it all with Romano/Parmesan cheese. Had it along side a spinach, strawberry, and walnut salad and garlic toast. A fantastic healthy meal that my little one gobbled up!

Todd's Famous Blueberry Pancakes

This recipe is great! I have used it 4 or 5 times in the past few months. The pancakes come out so thick and fluffy. They are really filling! As others have said, you don't need to wait any time at all once the batter is mixed. Also, I used fresh blueberries, and less than the recipe called for. When I used an entire half of a cup the blueberry taste was a tad over-whelming. Toss a few fresh berries on top of the pancakes on a plate and sprinkle with powdered sugar on top. It looks and tastes amazing!!
