Shrimp and Cheesy Grits with Bacon

Reviewed: May 26, 2012
LOVED this recipe! Nice, creamy, and easy and no tomatoes :) As always, I made a few changes but they were simple. I cooked the bacon whole and saved to sprinkle on top; added minced garlic to the pepper and onion, cooked that down and added about 2 TBSP of flour before adding the shrimp (which I increased to 2 lbs, jumbo-precooked); lastly I used water instead of chicken broth for my grits (personal preference). This recipe is a keeper for sure-Thanks!

Pumpkin Brownies

Very good-definately makes a more 'cakey' type of brownie. I follwed other reviwers advice and cut the butter down to 1/2 cup and this worked just fine:)

Chicken Tortilla Soup I

Reviewed: Nov. 7, 2009
Delicious! I skipped the hominy, used 1/2 an onion, 28oz diced tomatoes with green chilies, and added a small block of velveeta (chopped and added along with the beans and stuff). Next time I will try this in the slow cooker.

Favorite Banana Blueberry Quick Bread

Reviewed: Jul. 29, 2009
Awesome! Will definately make agian, next time I plan on trying with applesauce instead of the shortening. I took advice from other reviewers and upped the blueberries to 1 cup and cut the sugar to 3/4 cup. I did not have enough pecans so I used walnuts.

Quick Crescent Taco Pie

Reviewed: Jul. 13, 2009
Yummy & EASY! I took some tips from other reviewers and mixed 1/2 the sour cream in with the meat(my hubby hates sour cream but he never notices when I use it this way) along with a little(about 1/4 cup) shredded cheese. I also added about 1/3 cup medium salsa for a little spice. This will be going in the I-dont-know-what-to-make-and-need-something-quick-and-easy folder!

Aunt Anne's Coffee Cake

Reviewed: Apr. 26, 2009
Awsome and very easy. I do however recommend increasing the topping amt. I follow one reviewer's suggestion (1/2 cup flour, 1/2 cup brown sugar, 1/2 cup white sugar, same butter and cinnamon) and it is perfect every time! Thanks !

Pumpkin Pecan White Chocolate Cookies

Reviewed: Mar. 10, 2008
These cookies have a very mild flavor and like some of the other reviewers that didn't quite do it for me! Next time I'm uppping the amount of spice and adding a bit more sugar.

I'm not a huge fan of bean-with-bacon anything (my husband is) but I would totally make these agian, they were delicious!

Coconut Pineapple Chicken

Reviewed: May 30, 2007
My hubby and I really enjoyed this one, next time I will use coconut milk in place of the chicken broth as the coconut flavor was weak. I also used 1 Tbsp pineapple rum in place of the rum extract as I didn't have any on hand. Great with pina coladas and the 'best black bean' recipe on this site.

I used pineapple rum, light coconut milk, and Splenda and this was delicious(3 points for WW)! Need to add extra ice to get it slushy.
