Camp Cornbread

Reviewed: Sep. 20, 2010
This was very good. I used Marie Callendar's packaged mix, 2/3 c. milk, 2 eggs, 1 can of the creamed corn and 1 cup of sugar. I baked it in a 9 x 13 pan for about 45 minutes. It turned out more like a cake than cornbread. It could have been the mix. Either way, it sure was yummy!

Garlic Prime Rib

Reviewed: Nov. 17, 2007
Yummy!! I just fixed this for dinner...I used a New York cut roast, 3 and 1/2 pounds. I seared the top in 6 places, cut up 1 garlic clove and placed a piece in each cut. I also poured some worcestire on the meat, then put thyme and pepper on it. I tried to make au jus, but didn't have any beef broth...but I did have some ramen, so I took a beef packet out and used it. I added with water and put in the bottom of the pan. It worked! I also put 6 medium red potatoes in the pan and they turned out great. This is a keeper, thanks!

BBQ Pork for Sandwiches

Reviewed: Aug. 26, 2007
Not sure this is a 5 star recipe, but it is exactly what it said. I used pork sirloins and it turned out good. I didn't like the taste of the hickory bbq sauce on it though, may be a bad mixture with the beef broth? Anyhow, it was overall good, family liked it and it was very easy.

Seafood Fettuccine

Reviewed: Mar. 2, 2007
Wow, this made me feel like a real cook!! I looked over the ratings and changed the following: heavy cream instead of 1/2 and 1/2. I first sauteed red onion, green onions, mushrooms and garlic. I then added the shrimp and scallops, then the rest. I had the big sea scallops, so they took longer to cook, but it turned out DELICIOUS!! Thanks for a great recipe.

Slow Cooker Ham

Reviewed: Dec. 30, 2006
The best I have ever had, thank you!!!!! I even had my 12 yr old daughter throw the stuff in the crockpot, she was quite proud of her ham!!! "We" used a regular butt end ham, and before I served the ham, I dipped it in the sauce at the bottom of the pot.

German Chocolate Thumbprint Cookies

Reviewed: Dec. 24, 2006
These were ugly, butyummy! Since they were ugly and I was taking them to work, I decided to put the dough in an 8x8 pan, then put the topping mixture on. These were the best "brownies" I have ever made! I baked them for about 35 mnutes. I just kept checking them. I did end up taking some of the ugly cookies to work and one lady said they were the best cookies she had ever had! NOTE-I am high altitude, about 7000 above sea level, so not sure if they flattened due to that. I may try baking powder next time. (and I did add the extra 1/2 cup or so of flour because they were too sticky to work with). I think I will stick with the brownie version for now!

Hash Brown and Pork Chop Casserole

Reviewed: Jun. 7, 2006
This has become a regular dish as everyone in the family eats it!! The only thing I changed was the soup. I usually use cream of mushroom. It also takes about 15 minutes longer, but I am at high altitude, about 7000 feet. A keeper!

BBQ Sauce

Reviewed: Jun. 4, 2006
Loved it! I was looking for something with the ingredients I had, and this was it! I doubled the recipe as follows: 1/2 c. apple cider vinegar, 1 cup ketchup, 3/4 c. water, 1/2 c. brown sugar, sprinkle of Lawry's seasoning, a couple dashes of worcestersire sauce, and... I sauteed a 1/4 of a small onion (chopped fine)and 1 chopped garlic clove and tossed it all in the bowl at the same time. I did make a couple of squirts of ketchup to make a thicker consistency. After all that....I had some boneless pork ribs, tossed them in the crockpot and put the BBQ mixture over the top. Stirred together and cooked about 4 hrs. on high, then turned to low until we were ready for dinner. When we were ready to eat, I took a large slotted spoon and separated the pork. I then ladled it onto good hamburger buns and even the kids ate all their dinner! I think next time I will use the Hawaiian buns. Overall, YUMMY!! (even hubby said so and he doesn't say things too often!)
