Carribean Stew Chicken

Easy & delicious! A nice change in pace from our usual dinners. My boyfriend even said it was comparable to an authentic Caribbean carryout near our house!

Crispy Rosemary Chicken and Fries

Delicious! And easy, too! I made this for dinner on Friday & my boyfriend even said that this recipe is definitely a keeper! The skin on the thighs got nice & crispy but the chicken still had a nice juicy flavor. I didn't use fresh rosemary or oregano, but let the chicken "marinade" for a few hours in the olive oil, rosemary, oregano, salt & pepper. Then I laid the chicken on a greased baking sheet, tossed the potatoes in the remaining oil, spread those on the same baking sheet & salted them before going in the oven. I did more "dice" the potatoes and next time I think I will leave them as wedges.

Baked Soy Lemon Chops

This recipe was very simple, and all of the ingredients are things I usually keep on-hand. I didn't feel that the pork chops had a whole lot of flavor, I could taste the soy sauce more than anything else. Not bad, but could be better.

Flavorful Flounder

I don't always have the best luck with seafood recipes. My boyfriend prefers fried fish, which I'm not too fond of. I searched for a quick recipe using items I mostly already had. I was missing the green onions, and substituted with a few dashes of parsley. I decided to broil this fish on a well-greased broiling pan. Broiled for 4 minutes brushed with lemon juice, then coated with the mayo/cheese/parsley and broiled for another 3-4 minutes. Even my boyfriend was impressed. I will definitely make this recipe again!! Cheap, quick, and sample. :)

Beau Monde™ Dip

The first time I had this dip was at a girlfriend's New Years party, she served it in a round bread that she took out the center and used the torn up bread to eat the dip. When I make it, I add a little extra Beau Monde Seasoning and Dill, and can sit & eat it with a half of a bag of potato chips!
