Delicious! And easy, too! I made this for dinner on Friday & my boyfriend even said that this recipe is definitely a keeper! The skin on the thighs got nice & crispy but the chicken still had a nice juicy flavor. I didn't use fresh rosemary or oregano, but let the chicken "marinade" for a few hours in the olive oil, rosemary, oregano, salt & pepper. Then I laid the chicken on a greased baking sheet, tossed the potatoes in the remaining oil, spread those on the same baking sheet & salted them before going in the oven. I did more "dice" the potatoes and next time I think I will leave them as wedges.
