Anniversary Chicken I

Reviewed: Nov. 3, 2010
Made exactly as directed (except marinated the chicken in Teriyaki sauce while oven was preheating per other reviewer tip). Moist and flavorful. Picky husband gave it two thumbs up!

Super-Delicious Zuppa Toscana

Reviewed: Jan. 6, 2010
This soup is fantastic! I followed the recipe with one exception-I used kale instead of spinach. I also found that 3 russet potatoes were plenty (instead of the recommended 5). Will be making this over and over again. Tastes just like the famous restaurant soup!

Bourbon Chicken

Reviewed: Oct. 5, 2009
WOW, I'm surprised by the mixed reviews for this recipe. I found it to be excellent with 2 minor adjustments. I cubed my chicken before marinating and I cooked in my wok on top of stove. I only used about 1/2 cup of the marinade and let the sauce reduce until it was thick and sticky. Served with steamed rice and roasted broccoli. Loved it! Easy to make with common ingredients.

Herb Roasted Pork Loin and Potatoes

Reviewed: Sep. 14, 2009
This pork loin turned out perfectly. We are a family of 3 so I only used a 2 pound roast. I seasoned it as suggested but used fresh thyme that I had on hand instead of dried. Cooked it on low for 6 hours in my crockpot with about 1/4 cup of chicken broth added for moisture. Served with baked sweet potatoes and stewed cabbage. Thanks for the easy and delicious recipe.

Baked Teriyaki Chicken

Reviewed: Apr. 14, 2009
I loved this recipe! Easy to prepare with every day ingredients. I split the recipe in 1/2 for my family of 3 and it turned out perfectly. As other reviewers suggested, I only need to cook the thighs for 45 minutes and lined my pan with foil. Clean up was a breeze. A keeper for sure.

BLT Pasta Salad

Reviewed: Mar. 7, 2009
Nice to have a pasta salad that isn't made with the traditional italian dressing. I made this recipe exactly as suggested. It was moist and flavorful and ready in a flash. I tossed in 1/2 a cup of shredded cheddar cheese and added scallions to top of pasta right before servings. Everyone of us had second helpings. Will be making this again for sure.

Apple Cherry Cobbler

Reviewed: Mar. 5, 2009
My daughter made this recipe at school and suggested it for a dinner that I recently hosted. It got a thumbs up from the children in her 5th grade class as well as from my dinner guests. I served this cobbler warm with a dollop of Cool Whip. I found this dessert to be even better the next day when warmed in the microwave. I give this recipe 4 stars, as the cobbler is really not appetizing to look at in the pan. Shouldn't be a problem if you plate the dessert before serving to guests. Will be making this again and again.

Grilled Salmon I

Reviewed: Feb. 25, 2009
Excellent! Husband cooked this on our gas grill and it couldn't have been easier. I made the marinade early in the day and let the salmon marinate for about 5 hours. This is by far the best salmon I have ever eaten. Picky husband agrees. Will be making this again. Thanks!

Tex-Mex Burger with Cajun Mayo

Reviewed: Feb. 21, 2009
I was worried that this burger would taste a little like a spicy meatloaf but I am so glad that I tried this recipe. The cajun mayo is delicious and really makes this burger taste like it came from our favorite gourmet restaurant. My picky husband even gave it a thumbs up. I didn't have the fresh jalapeno so I used a couple of slices of pickled jalapeno and used American cheese. Other than that I followed the recipe exactly. Thanks for a new favorite.

Spicy Tortilla Roll-Ups

Reviewed: Feb. 20, 2009
Made this recipe for a baby shower at work. Only had 1/2 a block of cream cheese so I added a dollop of sour cream and split the recpe in 1/2. Didn't have the cilantro on hand but turned out tasty anyway. Has a nice kick to it without being too "spicy." Next time I think I will do as other members and add some shredded cheese. Will make again. **Update: I let this sit in the fridge overnight before taking to the shower and they became "spicer" overnight. Still a good recipe but will cut back on the pepper sauce if making a day in advance.

Chicken Roll Ups

Reviewed: Feb. 19, 2009
Excellent flavor. Easy to prepare with every day ingredients. I did make a slight change. Used chicken breast tenderloins instead of whole breast. Only had smoked bacon so I used a honey BBQ sauce to get that tangy honey flavor. Also wrapped the bacon with the breast in a pinwheel fashion instead of only on the outside of the breast. Then secured the entire wrap with a toothpick. Turned out so moist and flavorful. Hubby cooked them on the grill and they were ready to serve in less than 30 minutes. Will be making this recipe again and again. Thanks!

Cookies 'n Cream Cake

Reviewed: Feb. 14, 2009
Quick and Easy Recipe. I tweaked it just a little to suit my family. Used store bought vanilla icing to speed up the process and only added the crumbs to the middle layer of the cake. Topped with an Oreo in the center and Oreos along the bottom. Daughter loved it. Will make again.
