Zucchini Bread IV

Very good! Everyone loved it. I made 18 muffins from this recipe. I did what others suggested by using half oil, half applesauce and I used a cup of chocolate chips and a cup of walnuts. Very moist. I will be making these again. Thank you.

Chili Colorado

One of the Best Chili Colorado recipes we have found. Pork or Beef can be used. The key ingredient is chili powder so the higher the quality the better the taste. We make this as written except we prefer some fresh garlic sautéed with the onions. which I saute in the bacon fat or olive oil prior to cooking the meat. I just remove them from the pan and add back in later after the meat has browned with the other ingredients. I also prefer broth instead of water. We have made this several times and everyone who has tried it has liked it as much as we do. Thank you Ron for a winning recipe!

Cashew Raisin Rice Pilaf

Sherry Braised Beef Short Ribs

Excellent! Do not change a thing! Made as written, which is hard for me to do. First shot at making short ribs. I have made this twice now and wonderful both times. Actually did change one thing, cooked 2 1/2 hours both times because we had 4 1/2 pounds of meat to make 6 ribs. Meat is so tender and the rich flavor is awesome! Thank you Chef John for sharing!

Maple Roasted Brussels Sprouts with Bacon

I have made this several times. Great the way it is written and easy to change up. I now cook my bacon until it is halfway cooked and slice the brussels in half, just a preference for us, cuts the cooking time down. I use the fat from the bacon and some olive oil to just coat, but not 1/4 C. The bacon makes more fat while it continues to cook. I add garlic and walnuts. Thank you for sharing. BTW, my husband hated brussels...not anymore!

Carrot Souffle

Very good. My family really enjoyed this. I knew it would be a sweet side dish so I served it with pork to complement the meat. I did as some others suggested by using only 1/4 C brown and 1/4 C white sugars. I also reduced the butter to 1/3 C, added 1 tea spoon of cinnamon and a dash of nutmeg. I put the cooked carrots in my vitamix to avoid lumps. Really did not taste like carrots though.

Whipped Cream Cream Cheese Frosting

This is awesome! I made it using powdered sugar instead of granulated. I frosted carrot cupcakes with it. The consistency was fine for spreading it on cupcakes. It is light and not too sweet. Others reported the consistency being too thin, but by adding additional powdered sugar it could be thickened up. I had no problem with the consistency, but I beat the whipping cream a bit more than stiff peaks, but more like fluffy butter. My family LOVED this.

Paleo Tropical Ice Cream

Very good! Right consistency as soon as I made it. I chilled the coconut milk also, which helped. I toped with toasted shaved coconut and chopped macadamia nuts. Takes awhile after freezing the left overs to get it soft enough to eat like ice cream. Thank you for sharing this recipe!

Best Marinara Sauce Yet

Great Recipe! I follwed the recipe exact, except for another garlic clove and it was very easy and very good. I made chicken parmigiana with the sauce. My family really enjoyed this. I will be making this again. Thank you.

Broccoli Salad I

Everyone loves this salad. I make it for pot lucks all the time. I chopped the broccoli very small and I used red onion in place of the green and just used regular raisins. I make it the night before (we like it better this way) and add the bacon and sunflower seeds before serving.

Hot Bean Dip

This is easy to make and everyone loves it! My Daughter's friends ask for this Bean Dip all the time. I now omit the dried parsley, we like it better without and I use 4 oz can of fire roasted diced chilies instead of the green onions, as I usually don't have green onions on hand. Yum!! Pesto Cheesy Chicken Rolls

Wonderful! Followed recipe as written, except I seasoned the meat. I took the advice of others and dipped in egg and rolled in Panko. I figured this would keep the chicken from being too dry. It is a keeper. Thank you Chompy!

Blueberry Cream Muffins

Very good and very pretty muffins! Followed recipe as written except for the blueberries. I added three cups, as we love lots of berries. It was a perfect amount. These are not too sweet and I noticed that others added more sugar, but we liked them like this. I did dust sugar on the tops prior to baking. Everyone thought that these looked like they came from a bakery. I will make these again. Thanks KK3!

Italian Cheese Stuffed Pork Chops

Very, very good and very easy. I only used three pork chops cut 1 1/2 in. thick. I used 3 tablespoons of garlic butter flavored croutons and one tea thyme to our preference mixed with the cheese.

Fried Cabbage with Bacon, Onion, and Garlic

Great recipe! Went wonderful with our corn beef! Made as directed, but I only had three slices of thick cut pepper bacon and it was enough to give it a great flavor anyway. We liked that fact that this recipe can also be used with the Paleo or Primal Blue Print way of eating. Thank you Kathi for sharing!

Slow Cooker Beef Pot Roast

Great recipe! Followed recipe, except due to preference, I used half beef broth and half red wine in place of the chicken broth. Very good flavor and tender as well. Husband said it was one of the best he has tried. It is a keeper! Thank you, Chef John

Zucchini with Farfalle

Love this recipe as a start, as I have changed it over the months. I hate when others change a recipe, then rate it, so I am rating it on the original, which was good, but I wanted to get more veggies into this one, so I now add broccoli, sun dried tomatoes, mushrooms & kalamata olives and of course a bit more parmesan cheese. I only use 1/2 of a large onion, more garlic and cut the zucchini larger as we like our veggies tender crisp. Thank you Dave for the recipe, this is a regular in my home now.
