Fresh Tomato Basil Sauce

I have made this sauce three times now and each time it gets better. This is easy to make and a great way to use fresh tomatoes. I run mine through the food processor after cooking as my daughter likes the smooth texture better. I boil my tomatoes for two to three minutes, cool and peel. I don’t remove the seeds. Some have complained about the consistency. The juicier the tomatoes, the juicer the sauce. You could cut the tomatoes up, then drain them for awhile or add tomato paste for a thicker sauce. Everyone who has tried this has loved it. I use it to make chicken parmesan. Thank you Mindim for this fabulous recipe.

Toasted Garlic Bread

Wonderful! This is quick and easy and a real treat. My family and neighbors loved it last night with dinner. I did use an extra clove of garlic because we LOVE garlic and I used a good loaf of rustic french. I cooked it on a foil covered sheet pan with the edges of the foil up to catch any drippings that others described. This is restaurant quality. Thank you Clair.

Zucchini Patties

These are terrific. My husband likes everything with a bite to it so I added red pepper flakes and some chopped jalapeno. Sometimes I add crushed up Ritz crackers or some Panko bread crumbs. It would be hard to mess these up. Thank you Sherlie.

Garlic Chicken

This was delicious! The chicken was moist with a great flavor. My husband asked that I keep this recipe. I used panko bread crumbs and I had to double the bread crumbs and cheese to coat the chicken well,it could be that my chicken breasts were larger as I did have to cook an additional 7 minutes. I added salt, pepper and season mix to the bread crumbs and cheese mixture, but other than that I followed the original recipe. We had it with pasta and pesto. Thank you Carol for a great recipe.

Carrot Cake III

Wonderful carrot cake. Very moist. I used 1 C of oil and ½ C applesauce just to cut out some of the calories. I did as some others by using 1 C sugar and 1 C brown sugar. For personnel preference I added 1 C crushed pineapple, ½ C raisins and ½ C coconut. This is the recipe that I will be using from now on. Thank you.

Whipped Cream Cream Cheese Frosting

This is awesome! I made it using powdered sugar instead of granulated. I frosted carrot cupcakes with it. The consistency was fine for spreading it on cupcakes. It is light and not too sweet. Others reported the consistency being too thin, but by adding additional powdered sugar it could be thickened up. I had no problem with the consistency, but I beat the whipping cream a bit more than stiff peaks, but more like fluffy butter. My family LOVED this.

Broccoli Salad I

Everyone loves this salad. I make it for pot lucks all the time. I chopped the broccoli very small and I used red onion in place of the green and just used regular raisins. I make it the night before (we like it better this way) and add the bacon and sunflower seeds before serving.

Slow Cooked Corned Beef for Sandwiches

I followed this recipe as stated. I used Guinness as my beer choice. Cooked this in a Dutch oven on the stove top for six hours. Wrapped meat in foil and let it rest for 30 minutes while veggies cooked. Strained the broth and cooked potatoes, carrots, onion and cabbage in the left over broth. Had company over for dinner and everyone thought that this was excellent. Meat was very tender with great flavor. Veggies took on the great flavor too. Looking forward to a sandwich with the leftovers. Thank you for the recipe. Update: I have made this many times now and love it every time. I now use a corned beef round instead of a brisket and it is even better.

Best Marinara Sauce Yet

Great Recipe! I follwed the recipe exact, except for another garlic clove and it was very easy and very good. I made chicken parmigiana with the sauce. My family really enjoyed this. I will be making this again. Thank you.

Hot Bean Dip

This is easy to make and everyone loves it! My Daughter's friends ask for this Bean Dip all the time. I now omit the dried parsley, we like it better without and I use 4 oz can of fire roasted diced chilies instead of the green onions, as I usually don't have green onions on hand. Yum!! Carrot Souffle

Very good. My family really enjoyed this. I knew it would be a sweet side dish so I served it with pork to complement the meat. I did as some others suggested by using only 1/4 C brown and 1/4 C white sugars. I also reduced the butter to 1/3 C, added 1 tea spoon of cinnamon and a dash of nutmeg. I put the cooked carrots in my vitamix to avoid lumps. Really did not taste like carrots though.

Zucchini Bread IV

Very good! Everyone loved it. I made 18 muffins from this recipe. I did what others suggested by using half oil, half applesauce and I used a cup of chocolate chips and a cup of walnuts. Very moist. I will be making these again. Thank you.
