Very easy and wonderful. We did add a chopped jalapeno, some Goya Adobo seasoning, and some extra garlic. We'll definitely make this again!

Putzy but well-worth it. This was a wonderfully light dessert following our heavy Christmas meal. I used a little bit bigger pan than the recipe suggested so I adjusted the baking time a bit, but it still turned out wonderfully!

Cranberry Applesauce Muffins

We made as directed except we used some pomegranate seeds that we had on hand. I do agree that a little bit of nutmeg would have helped. I did decrease the baking time a bit too. We'll definitely be making these again with cranberries or any other fruit!

Rhubarb Bread I

We used 2 cups of rhubarb and added 1 1/2 tsp. of cinnamon to the batter (at the suggestion of some previous reviewers). I baked both loaves in dark pans, and 40 minutes was perfect. I did use parchment paper (again at previous reviewers suggestion). I did use the topping but may try it once without it as it seemed good enough with the extra cinnamon in the batter.

Rhubarb Drop Cookies

Made a double batch from the get-go. Used half brown and half white sugar as well as half the cloves and replaced the other half with all-spice. Very much like a small piece of rhubarb cake. Will likely make again!!

Baked Beans, Texas Ranger

I didn't elimate any extra liquid from the can of baked beans (Bush's Homestyle Baked Beans) but then decreased the vinegar by 1 tablespoon. We're not big green pepper fans so I used 2 teaspoons crushed red pepper flakes instead. I also picked up 1/2 pound spicy pork sausage to replace the links. My mother-in-law preferred these to her own family recipe. **5/12 addition: We have made these several times since the original review and still love them. I've gotten "braver" and save myself some kitchen warmth by using the slow cooker. Half a day in there and they're as good or better than from the oven!

Lemon Raspberry-Filled Cake

We made the cake as directed, and it was very moist and light. We thought we'd save the calories on the frosting so I folded sugar-free raspberry Jell-O into Lite Cool Whip instead. Stuck that back in the fridge for a bit before we frosted just the top of the cake. Wonderfully light and fruity!! We'll definitely make this again, and it mixes my in-laws 2 favorite flavors.

We tried boiling the potatoes already cut up to save time, but then the edges were soft when we went to stir everything together. We'll boil them whole next time.

Pecan Pie Bars I

Very good! We made for home because we wanted 2 desserts for our Thanksgiving, but ended up sending the leftovers to wirk with my fiancee. We could have eaten the whole pan at home but it was a little much for the 3 of us.

Lime Cilantro Rice

We did as others suggested, using chicken broth and eliminating the zest. Otherwise we followed the recipe. Very good and a great home-version of the chain restaurant's rice.
