Pineapple Upside-Down Cake VII

One more suggestion to clarify this recipe. The baking instructions on the cake mix really don't work for this because you are putting a whole cake mix in a 9-inch skillet. I found it worked to bake at 350 for 35 minutes, then lower the temperature to 325 for ten minutes. With that adjustment, I had a very good result. Without lowering the temp, the outside would have over-baked before the center was done. Served this to guests with vanilla ice cream last night and it was delicious and beautiful. For those that had overflow from a 9-inch skillet, I think it's worth pointing out that the height of the sides/walls of skillets also vary. Mine was about 2-1/4 inches. Hope others find this information to be helpful.

Fiesta Chicken with Black Bean Salsa

Hawaiian Ham Bake

Just had this made with leftover ham slices from Thanksgiving and used what I had on hand which was scallions but no green pepper or pineapple but I did have pineapple juice on hand which I used. Left ham in slices rather than cubing it. As per the advice of others I used 3 t. soy sauce, 1/2 or so brown sugar. Did not use raisins. Served with jasmine rice and nice salad. A tasty and satisfying meal. Will definitely use this recipe again.

Cheesy Eggplant Bake

This recipe is great. So nourishing and satisfying over pasta. My husband would rather have it than eat out at a nice Italian restaurant. Better than any eggplant parmesan which we've prepared many different ways.

Amazing Pork Tenderloin in the Slow Cooker

Egg Custard Pie III

In my opinion this pie has too much butter. When I took it out of the oven, I blotted lots of excess butter off the top with paper towels. Otherwise the pie is fine. Next time I will use a custard recipe with no butter. There are many on this site.

Old Time Chicken Divan

This is wonderful. Followed the recipe as is but substituted half and half for heavy cream. So much better than any "add a can of soup" type casserole. Tastes light and fresh and lovely.

Sour Cream Refrigerator Mashed Potatoes

I halved the recipe and added some milk to make them fluffier. Also added some minced garlic. Everyone in my family loved them! Will definitely be making these again.

Chantal's New York Cheesecake

I made this cheesecake for Christmas and it was perfect! It neither cracked nor sagged and was beautiful and absolutely yummy in texture and flavor. My cream cheese was out of the frig for hours to ensure room temperature. Also I baked it in the evening, turned the oven off and went to bed so it cooled in the oven overnight. I left it in the spring form pan until a few hours before serving. My family is already wanting me to bake another one...and I definitely will!
