Italian Confetti Pasta Salad

A little variation: Add red, orange and yellow bell pepper, diced; a can of drained pineapple chunks OR a cup of small seedless red grapes, halved. This adds a little sweet touch to the savory and despite how odd it sounds, is very good. Black olives, sliced green olives with pimentos, diced sauteed or fresh zucchini or yellow squash... This is a versatile, easy and festive side dish for a large gathering.

Southwestern Roasted Corn Salad

Did as others suggested and used frozen corn to start, then roasted it. Made no changes except to add a handful of feta cheese to the dressing as it spun in the blender, which made it creamy and a bit richer. Tangy and bright tasting the first day- a bit bland the second after refrigeration.

Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

Yum, yum, yum!! Great blending of flavors, awesome southwestern style, can't go wrong with this sandwich! Pet peeve warning: Why, oh why do people rate recipes that they haven't tried yet? Why do they substitute ingredients and cooking methods and then complain that it isn't what they thought it should be? This is a wonderful recipe and should be acknowledged as such. Rant is done. :)

Eggplant Parmigiana Caponata

Like several others, I made some changes to the recipe based on other comments. I reduced the brown sugar to 3 tablespoons, removed the anchovies, used only balsamic vinegar (didn't have any red wine vinegar handy) and used only about 2 tablespoons of olive oil along with some olive oil spray during sauteing. (Way more healthy with less total fat!) I also added 1/4 cup of chopped kalamata olives, an 1/8 cup of chopped green olives and 3/4 of a cup of sauteed sliced white mushrooms. This was an amazingly good base for a recipe, and even better after sitting a day for the flavors to meld.

Norwegian Pancakes - Pannekaken

Very easy to make, quick to prepare. We've had these for breakfast two days in a row. :) Cooking technique is important: We don't have a crepe pan so used a regular frying pan instead. The batter needs to be thinly spread or it doesn't cook through. We made a side relish of peeled and diced apples and pears mixed with a little brown sugar and apple butter, then sauteed until soft. This was excellent with the pancakes and even better the second day. (Also used real maple syrup. Yum.) :)

Chocolate Mousse Cake IV

Great taste, very rich! So, I'm beating the chocolate mixture with the hand-hel mixer and suddenly there's an electrical burning smell and the beaters start to smoke. Needless to say, I finished mixing by hand. When it came time to add the cream, since I couldn't whip it, I just added an entire can of redi-whip and mixed it in. Surprisingly, it worked just fine. :) For a slightly deeper chocolate taste, I did add one tablespoon of dry instant coffee to the water to add just a hint of mocha. Great recipe!

Chocolate Zucchini Bread I

Update: 8-30-10 LOVE LOVE LOVE THIS BREAD!! We now substitute 1/2 c. applesauce and 1/2 c. oil for the 1 c. vegetable oil it calls for and last night, tried adding Hershey's Special Dark chocolate chips. TO DIE FOR! Yum. A week ago we made this bread exactly as written, dividing it into a smaller loaf pan and a cupcake tin. Tonight, we "discovered" a lone cupcake still in a plastic container in the refrigerator. My husband asked if we should throw it away because he was sure it would be disgusting and dry. We each took a half and then instantly regretted sharing. Moist, delicious and wonderful.

German Apple Cake I

Wow, yummy! Made it as written except for the 3/4 cup applesauce/ 1/4 c. oil substitution that many made. Also greased and sugared the pan and made it with 1 c. white sugar and 1 c. of brown sugar. A definite keeper!

Simple Scones

I have to add to the number of positive reviews for these scones. I made them as stated, except added a bit of almond extract and dried cherries that had been softened in water. Family raved and this WILL be our new favorite recipe.
