Oatmeal Pancakes

These pancakes were very very good! I did add 1/4 cup of ground flax seed for more fiber and 1 tsp. of cinnamon and 1/4 cup of brown sugar (omitted the white sugar). I tripled the recipe because I fed 4 people and my youngest som loves pancakes for leftovers.

Bow Ties with Sausage, Tomatoes and Cream

Oh Yeah, this is awesome - wow! I did not need or use the oil or added salt. I used turkey sausage to cut some fat content, but the flavor was still wonderful!

Chicken Alfredo with Fettuccini Noodles

Wow! I made this for my son and his girlfriend for their Senior prom. I normally don't cook like this because of the fat and calorie content, but I gotta tell ya - this was delicious. I did cut down my ingredients some and still had plenty of sauce. I also used skim ricotta cheese. This one's a keeper, especially for a romantic dinner!

Famous Butter Chicken

Wow, was this chicken good! I bought thin chicken breasts, which I was very happy about because you could really taste the butter crackers! Also, I used a lower fat butter and only 1/3 of a cup. I have a hard time using an entire cube of butter in one recipe. :) I will make this again and again. FYI: to crush crackers easier, put in a thicker ziplock bag and seal.

Tasty Tuna Pasta

This was good, not great. It lacked a little in the higher taste category. My family did like it, though. Good alternate for regular tuna casserole.
