Nanna's Banana Bread

I cannot overstate how wonderful this banana bread is. This has become my only banana bread recipe and I get asked for it every time I bring a loaf somewhere. The only thing I changed is I omit the cinnamon and walnuts. This bread has a little bit of crunch to the crust, the perfect amount of sugar and is perfectly moist without being dense or wet. My husband is a vegan so I make a vegan loaf for him too using Ener-G Egg replacer and soymilk with a splash of lemon juice added for the buttermilk. Perfection every time!

Moist, Tender Spice Cake: Gingerbread Variation

This was wonderful! I am not a huge gingerbread fan, but this was delicious. I just finished it with a dusting of confectioners' sugar. It would be delicious served ala mode with vanilla ice cream, or a dollop of whipped cream. We are vegans so I had to "veganize" it and it still came out perfectly!

Apricot Cream Cheese Thumbprints

I added this recipe to my 'Recipe Box' in December 2007 and have made them every Christmas since! They are a must have Christmas cookie in our home. The flavors are subtle, the cookies stay soft and moist and they are just so pretty. We do lots of different jams: strawberry, apricot, raspberry, black cherry, blueberry, anything really! My husband is a vegan so I've been making this vegan all these years with soy cream cheese & Earth Balance margarine and they come out perfect every time. The only real changes I've made to the recipe over the years is to add extra lemon zest and about a TBSP of vanilla. The sprinkle of confectioner's sugar after they cool is a must, it really makes them so pretty. Thanks for such a perfect cookies recipe!

Confetti Pies

This is a throw back for me because my grandmother used to make this pie every Christmas or Thanksgiving (which ever holiday we were with her that year). My brothers and I LOVED it and I was thinking about it this year and was glad to find this for our Christmas dessert. If making a big mess is a problem do what I did, fold the ingredients together with a rubber spatula. We are actually vegan so I veganized it and it is still just lovely and brings back those New England Christmas memories. Thanks for posting this!!
