Homesteader Cornbread

Very good. I like my corn bread a little sweeter though. Maybe I'll experiment with creamed corn next time.

Millie Pasquinelli's Fried Chicken

Reviewed: Mar. 15, 2009
Delicious! These are a big hit every time I make them. I was skeptical about cooking them in oil on low for 10 minutes, but man, that must be the secret, these are so juicy (NOT greasy) and flavorful! It doesn't hurt to kick the seasoning up a bit, and sometimes I rub the chicken with cajun spices before coating when we want something with a little bite.

Garlic Red Potatoes

Reviewed: Mar. 15, 2009
I've made these a few times now and they're always pretty good. I quickly figured out that these can use bit more garlic and a little more salt. Also, extra virgin olive oil adds a nice flavor when used instead of butter. It's much easier if you "toss" the potatoes in a sealed container, it coats them nicely.

Garlic Prime Rib

Are you kidding me? I never thought I could make prime rib that tasted this good! This is so simple and delicious. It's worth every penny you spend on this expensive cut of meat.

My Mom's Parmesan Chicken

Reviewed: Dec. 9, 2008
Very, very good. I didn't use butter or wine though, I only coated the pan lightly with extra virgin olive oil. I also tried topping it with sauce and a slice of mozzarella cheese during the last 15 minutes. Fantastic!

Brown Sugar Meatloaf

Reviewed: Feb. 2, 2008
Absolutely the best meatloaf I've ever had! It has a wonderful flavor & texture. Don't change a thing. (Except maybe using onion soup mix in lieu of an onion) Putting the brown sugar & ketchup on top makes it too sweet. Let it mix with the juices in the bottom of the pan.
