Pat's Mushroom Saute

Yum yum. I am actually not a fan a of mushrooms all but this was absoultely delicious. I made these to top grilled steaks and now I'm going to make them just to eat alone. Thanks to Pat I think I actually like mushrooms now! Reminder: You probably only need to sautee for 10 min or so and add a touch of salt.

Strawberry Coffee Cake

I LOVE this recipe. I am a strawberry lover and this was so easy and tasty. I also mixed brown sugar and white sugar for my topping. Turned out beautifully and had a delicious strawberry favor.

Bob's Awesome Lasagna

Fantastic. This was my 1st time making lasagna and my bf said it was the best lasagna he's ever had! Thanks to the suggestions of others the dish couldn't have turned out any better. My adjustments. 1.) Whole wheat noodles, 2.) Sauteed fresh chopped garlic with onion before adding beef, added oregano and italian seasoning 3.) Added chopped/drained spinich to meat /sauce mixture 4.) Cheese mix: used 1/2 ricotta, 1/2 cottage cheese, 1lb mozzarella mixed all together with 1 egg. 5.) Baked covered with foil for 50 min, uncovered for 10 then broiled for a few minutes until cheese browned. (Used 2 (24.5 oz) jars Classico Mushroom & Olive tomato sauce..perfect b/c it had some mushroom in it!) Absolutely delicious!

Mediterranean Chicken

Healthy and delicious.... this is an excellent recipe! I used: Fresh roma tomatoes, a mixture of lemon basil and regular basil, and quality kalamata olives. I tried to use all fresh ingredients. When seasoning with salt & pepper, I also added a touch of curry powder tossed with a cup of reduced fat feta and some whole wheat rotini pasta. AMAZING.

Peppermint Biscotti

FANTASTIC! I made these last X-mas and packaged them up in a mini baskets with mugs, chocolate, and coffee beans. It was a huge hit. I dipped the biscotti in white chocolate and then sprinkled with the peppermint candy. The white chocolate for this recipe is a MUST. Amazing and my friends keep nagging me to make it again...but I think I'll make them wait until Dec. ;)

Fiery Fish Tacos with Crunchy Corn Salsa

Easy and delish. The corn salsa was a hit..ppl were eating just the salsa and I almost ran out before the fish was grilled. I made the corn salsa the night before. Make sure you don't just juice but actually ZEST the limes. It gives the salsa an extra refreshing and tangy kick!

Very delcious and easy to make. I served this along with roasted garlic mashed potatoes and some asparagus and butternut squash. Yum! My bf loved this meal. I will definitely make this again and again and again!

Grandmother's Buttermilk Cornbread

Delicious golden cornbread! Just made these for a big family BBQ that my sister and I hosted. Easy to make and not too sweet. I followed the recipe exactly but the bread was still a lil dry. I think I'll add a lil oil next time. Using a cast iron skillet was defnitely a must!

Mouth-Watering Stuffed Mushrooms

WOW these are fabulous. Per another's suggestion, I added crumbled turkey bacon and chives to the cream cheese mixture then sprinkled italian breadcrumbs and then drizzled with butter before popping into the oven. EVERYONE at my dinner party raved at how delicious, rich and creamy they were. Thanks for the recipe!

Eggplant Parmesan II

UPDATE 7/9/12: Thanks to reviewers I got them to be crispy! PERFECTLY crispy. My boyfriend said they were the best eggplant parm he's ever had. Here are the new steps: 1.) Sweat egglants, no need to peel 2.) Used Italian style crispy PANKO crumbs. 3.) Baked 10 min each side @ 425 degrees on baking sheet sprayed with PAM 4.) Spooned teaspoon of marinara/tomato sauce just over top of each eggplant and sprinkled with, fresh chopped basil and shredded mozarella 5.) Put back in oven and broiled until cheese was bubbly and lightly browned. I'm telling you, this makes them super crispy. Delicious! ------------------------ My family thought this was great when I cooked it for my sister's b-day but I personally like my Eggplant Parmesean really crispy. I baked 10 min on each side before baking in sauce..but it still was pretty mushy..not sure if it's b/c it's not fried, bathed in sauce or not cooked long enough. I also sweat the slices for 30 min before cooking. Will definitely make again though.

Roasted Garlic Mashed Potatoes

Excellent. I also added some Parmesean cheese and some garlic salt. The roasted garlic is the key as it adds a delicious garlic flavor without overwhelming. I used margarine and non-fat half and half.

Mini Apricot Cheesecakes

Excellent! I made these for my family and friends for Easter and they said this was possibly better than a restaurant's cheesecake! I reduced the sugar to 1/2 cup. And Instead of Apricot topping I topped with a berry preserve and fresh rasberries and drizzled with white chocolate. For another batch I topped with heavy cream, and drizzled with dark chocolate and carmel. Then I topped THAT with slivered almonds lightly toasted in butter and then shaved some extra dark chocolate at the end before serving. For the crust, I mixed melted butter, graham cracker crust and a little brown sugar. Obviously these changes extends the cook/prep time, but the results are FABULOUS! I've been commishioned to make 50 for a grand opening for a friend!

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

oo lalala this meal was delish! Made this for xmas eve dinner and the scent of rosemary and garlic wafting from the meat was heavenly. The only thing I did different was to sear the loin before roasting. The outer layer was crisp while the inside was tender and juicy. All of my guests went for seconds and thirds. Thanks for the recipe!

Jamie's Cranberry Spinach Salad

Hands down one of the best salads I've had..EVER! I served this at Thanksgiving and my guests requested seconds and thirds! I also used less oil, sugar, cider vingar, etc. You should def. toast the almonds in butter as it really brings out the flavor. Toasted seasme seeds were also a must for the dressing. Do not toss the salad with the dressing until the last minute in order to keep the spinach fresh. Thanks Jaime!

Ali's Amazing Bruschetta

Easy and Delish! I served this with some pasta at a Christmas party that I hosted and it was a huge hit. I took the suggestions of many and rubbed garlic cloves on the bread slices, brushed them with butter and then toasted lightly for a few minutes before placing the tomato mix on the bread. The tomato mix also included balsamc vinegar, salt, pepper, minced galic and capers. I also reduced the amount of onions. I topped the tomato mix with finely shredded mozarella before I toasted the bread for a second time. Mmm Mmmm Mmmm!

Honey Mustard Dressing II

Excellent. I sub'd for a healthier dressing and was blown away by the result! I used coarse grain dijon mustard & nonfat plain greek yogurt. I've served the dressing on the side with herb crusted chicken & fish on separate occasions. So good!

Pumpkin Stew

I had a 5 person Thanksgiving party this year and decided t try this recipe. Made stew in 5 small individual pumpkins and they were a HUGE HIT. I was nervous about how everything would turn out but I followed other's suggestions and it was such a success. A few notes.. 1.) Instead of 1 large 10-12 lbs pumpkin I used 5 small organic sugar pumpkins. Extends prep time but the presentation is amazing and your guests will be amazed! Rubbed pumpkin pie spice on inside of hallowed out pumpkin before pouring stew and baking. 2.) Additional ingredients: Sliced celery (adds flavor!), corn, cut green beans, & portabella mushroom. Very hearty. 3.) Reduced salt by 1/2 4.) Wet stems & cover with foil when bakiing. DO NOT overbake. I baked for only 1 hour 15 min. 5.) Sprinkled freshly grated Parmesean Reggiano and toasted spiced pumpkin seeds (collected from the pumpkins)on top of each stew right before serving. Comfort food, folks! Wonderful.

Chicken Pot Pie IX

Very good. I followed suggestions and cooked chicken in chicken broth, brushed crusts with egg white and prebaked the bottom shell for 5 min. Used low sodium broth but think I'll stick with regular next time and double the seasonings to the gravy. I added diced potatoes, corn, and cut green beans. Will make again and again!

Creamy Dill Dipping Sauce

I used more fresh dill than orignally called for and fat-free sour cream, light mayo and a few dashes of onion powder. Added a dallop of this sauce to some cedar smoked salmon..DELICIOUS & healthy compliment! Perfect for my diabetic mother.
